18.01.2022 Are you ready to try our next deliciously LOUD recipe from MasterChef star and #LoudShirtDay2020 ambassador, Ben Trobbiani? Thai style BBQ pork and pineapple skewers Ingredients:... 800g pork neck (also known as pork scotch fillet) or skinless pork shoulder, cut into approximately 4cm lengths 4 garlics cloves, crushed and finely chopped 30g of ginger finely grated 40g of palm sugar finely grated or dark brown sugar 1 tbsp. fish sauce 1 tbsp. soy sauce 1 tbsp. oyster sauce The stems and root from 1 bunch of coriander, finely diced Half a small pineapple, cut into 2-3cm cubes (prepare on the day of cooking the skewers) Method: Combine the ginger, garlic, sugar, fish sauce, soy sauce, oyster sauce and coriander roots/ stems in a large bowl then mix together until the sugar has dissolved. Add the cut pork and toss with your hands so the marinade evenly coats all the pork. Allow to marinate for 3-24 hours. When you’re ready to cook, place one piece of pineapple at the bottom of a skewer, then thread on 3-4 bits of pork, then top with another piece of pineapple. Place aside until needed. Repeat until you have used all of the pork. Heat a BBQ to a medium heat and slowly cook the pork, turning once, until golden on the outside and cooked through in the middle around 10-15 minutes. Plate up and serve! Makes around 12-15 skewers.
