16.01.2022 My New Years Resolution is to try and significantly cut down our waste I find this task so incredibly overwhelming, so instead brake it down into tiny things you can implement in your life that will make a difference. If we all just do one or two things this year- thats how we make the difference! We dont all need to be tree hugging, vegan, eco warriors I have just put our bin out this morning and weve got one bag of rubbish in there this week which makes me sup...er proud and is now our challenge to keep it that low when my husband gets home and theres a. Extra person in our house. Here are some really simple things Im doing to try and make a difference, add yours to the list and we can all help each other: Declining a straw or using your own reusable straw Fresh produce bags Metal clothes pegs No disposable takeaway coffee cups Recycling your soft plastics by collecting them and taking them back to Coles or Woolies Cloth Nappies- make the switch, its easier than you think! 14.01.2022 A L I E N P I K E L E T S We were gifted some kale that was picked from the ground yesterday I decided to have a go at a sweet kale recipe to get some more veg into my kids They wolfed them down for morning tea today- each having 4 pikelets. Safe to say there arent many leftovers Recipe: 1 cup kale and or spinach 3 bananas ... 3 eggs 1 cup Wholemeal Self Raising Flour 1/2 cup almond milk (or milk of choice) I whizzed up the kale in my thermo then added the banana and whizzed, added the eggs and milk and blended until smooth then added the flour and cooked in a frypan. Took a little longer than our normal morning tea but so worth the effort. I served them with strawberries, some raw honey and some coconut yoghurt but you could serve them with whatever! 13.01.2022 My beautiful stash of clean cloth nappies the best thing when these are folded and ready to put away... until 2 days later when we do it all again We were a bit late to the cloth nappy party, starting only when my second child was 1. Weve now been doing them for a whole year and not one part of me regrets the decision. The amount of nappies we have save from landfill and the cost saved on buying a box of nappies in my shopping has made it well worth it. 08.01.2022 If you followed along with my stories today you would have seen we made some yummy vege hash browns for lunch. I froze enough at the end for some snacks through the week too Recipe and method as follows: 500g mixed veg (I used potato and zucchini but have done sweet potato too before) 3 eggs 2tbs plain flour 60g cheese ... Blitz veg until quite fine (up to you how chunky but they will take longer to cook if too chunky) take the veg out and try and get as much moisture of them as possible. Grate cheese or blitz on speed 6. Add veg back with eggs and flour and mix slowly until combined. Heat up a frypan with oil of choice (I used coconut oil) and cook with lid on for a few mins on each side. Drain on a paper towel and then serve We ate ours with egg and avocado and it was delish.
