25.01.2022 As the cool weather descends and seafood prices are so keen, a big pot of Cajun prawn boil with lemon drawn butter is the perfect way to warm up. INGREDIENTS cup Creole, Cajun or Old Bay seasoning, plus extra to serve 4 litres water... 12 baby cocktail potatoes, red skin if possible 45gm each 3 corn, cut into chunks (about 5 pieces) 2 Spanish, onion, cut into wedges 2 heads of garlic, halved crossways 1 lemon, halved 300 g baby chorizo 3 sprigs thyme 750 g large green Australian prawns shells on Lemon drawn butter 100 g unsalted, good-quality butter, coarsely chopped Finely grated rind and juice of 1 lemon 2 small garlic cloves, crushed 2 tablespoons flat-leaf parsley, finely chopped 1 tablespoon chives, finely chopped METHOD For lemon drawn butter, heat butter in a small saucepan over medium heat. Reduce heat to low and simmer slowly, skimming the foam until butter is clear (5-7 minutes). Becareful hot butter may spit. Carefully, strain through a fine sieve, lined with muslin, discard solids and keep warm. Before serving, add lemon and herbs. Combine water, creole seasoning and a generous amount of salt to taste in a large saucepan over medium-high heat. Bring to the simmer then add potatoes and cook partially covered for 10 minutes, add onion, chorizo and garlic and cook for 8 minutes, then add corn. Cook until corn is almost tender (3-4 minutes). Add prawns, bring to the boil and stir occasionally until prawns are bright pink and cooked through (3-4 minutes). Drain and place chorizo on BBQ grill until crispy, serve hot, scatter with extra seasoning if desired, drawn lemon butter, beer and plenty of napkins. *Note: look for Old Bay, Creole or Cajun seasoning at your local grocer. See how its done at https://bit.ly/2S51CKP INGREDIENTS 20 green Australian Prawns 40g butter... 3 cloves garlic, crushed 2 tablespoons plain flour 500g potatoes, peeled & chopped into small dice 1 litre fish stock cup single cream 1 cup corn kernels Creme fraiche & crispy chopped pancetta to serve Baby chervil to serve CHEDDAR SCONES 1 cups self-raising flour 40g chilled unsalted butter, chopped 50g grated cheddar, plus extra for sprinkling cup buttermilk, plus extra for brushing Sea salt & black cracked pepper Preheat the oven to 200C. METHOD To make the cheddar scones: Place flour & butter into a bowl & use your fingertips to mix in butter until it resembles fine breadcrumbs. Add the cheddar & buttermilk, season with salt & pepper & mix until just combined. Transfer to a floured surface & bring together. Roll out to 2 cm round & score into squares. Transfer to a lightly floured baking tray. Brush with extra buttermilk & sprinkle with extra cheddar. Bake for 20-25 minutes or until golden & cooked through. Set aside. To make the chowder: Heat butter in a large saucepan. Add garlic & cook for 1-2 minutes or untillightly browned. Add the flour & stir for 1 minute. Add potatoes & stock, bring to the boil stirring occasionally. Reduce heat & simmer for 10-12 minutes or until potatoes are cooked. Using a stick blender blend until smooth. Peel & devein the prawns, removing the tails. Return to saucepan & add the cream, corn & prawns & cook for a further 5 minutes or until the prawns are cooked. Season with salt & pepper. Top with creme fraiche, crispy chopped pancetta & baby chervil to serve.

Add the oyster sauce, soy sauce, sugar and chicken stock, and bring to a boil. Add the asparagus and noodles to the wok and mix well to combine. Continue to cook for about 2-3 minutes until the noodles are nearly al dente. Transfer to a plate and garnish with basil leaves.
