TASTING NOTES A clean-finishing, full strength, Australian-style cloudy pale ale for cracking refreshment. Malted wheat adds to its refreshing character and a concoction of hops creates fruity aromas with hints of passionfruit, grapefruit & citrus. THE STORY When James Squire was discovered stealing ingredients from the stores to make the colony’s first batch of beer, the Judge ordered 150 lashes plus two barrels of ale. Thankfully for us, James Squire was a far better brewer than he was a thief.

14.01.2022 S L O W C O O K E D B E E F F I L L E T W I T H C R U S H E D B L A C K P E P P E R A N... D B A L S A M I C Ingredients: 1-1.2 kg beef fillet 1 tablespoon crushed black peppercorns 2 teaspoons rosemary, roughly chopped 2 teaspoons thyme, roughly chopped 3 cloves garlic, thinly sliced 3-4 fresh bay leaves cup vino cotto or balsamic vinegar sea salt extra virgin olive oil, for cooking Method: 1Tuck the skinny tail end of the beef under the fillet, then secure with kitchen string. Tie the rest of the fillet at 4 cm intervals to create an even shape and width from one end of the fillet to the other. Place in a roasting pan. 2Mix pepper, rosemary and thyme and rub all over beef, then top with garlic and bay leaves. 3Carefully pour over vino cotto, cover with plastic film and leave in the refrigerator to marinate for a couple of hours or overnight, turning occasionally. 4Remove fillet from refrigerator and leave for 1 hour to come to room temperature. 5Preheat fan-forced oven to 70C (158F). 6Remove beef from marinade and pat dry with paper towel, then place in a clean roasting pan, drizzle with olive oil and roast for 4 hours. 7If you wish to sear the beef to give it a caramelised appearance, when you remove the beef from the oven rub it with a little salt, heat a splash of olive oil in a large frying pan over high heat then add beef and seal on all sides quickly until coloured. Remove from pan and leave to rest for 2030 minutes. The beef will be beautifully pink all the way through. 8Cut into thick slices and serve. #stroudbutchery #shopmidcoast #australianbeefthegreatest

10.01.2022 Horse Soorts Arena at Stroud Showground is about to be completed! It’s been a lengthy process to have the 2 trees removed. Stroud Rodeo and Campdraft our drea...m is about to come true. Sadly, Lawrie Hamilton who recently lost his battle to cancer won’t see this dream come true, Lawrie worked tirelessly on plans for many years. This arena will also be used by Stroud Pony Club & Stroud Horse Riding Club Inc. Many thanks Michael Johnsen MP - Nationals Member for Upper Hunter for your support! New Horse Sports arena for Stroud Showground A new campdraft arena is under construction at the Stroud Showground, with site preparation works getting underway this week. MidCoast Council is working with the Stroud Showground Committee to construct a new campdraft arena and stockyards, funded thanks to a NSW Government Stronger Country Communities grant of $150,000. The development site contains two Cabbage Gum trees located within the site, which will need to be removed prior to works commencing, said Council’s Manager of Community Spaces, Recreation and Trades, Daniel Aldridge. Another five Cabbage Gums located close to the site will be retained and protected, with mulching and bollards installed to protect the trees during construction. We undertake the tree removal using sensitive dismantling techniques, which includes inspecting of hollows and cavities to relocate any fauna, and close inspection during the removal process for displaced fauna, explained Mr Aldridge. All useful hollows, branches and deadwood will be lowered from the trees and relocated to protected areas within the site. Woodchip generated from the removal will be used onsite, and Council has approached the Stroud Men’s Shed who will seek to use timber from the trees to repurpose for construction uses, such as seating and tables. Council has also engaged a contractor to collect seed from the removed trees. The contractor will propagate the seedlings for replanting of at least 15 trees as an offset along the northeast boundary of the Showground. The campdraft arena and stockyards construction is expected to be complete by early October, weather permitting.

03.01.2022 Holiday safely and support MidCoast business MidCoast businesses are ensuring COVID-safe plans are in place as they prepare for a bumper October school holiday ...period, with solid accommodation bookings across the region. Many businesses are reporting much stronger business over this quarter than previously, as visitors, largely from NSW, flock to our region because of travel restrictions and border closures. Coastal regions are reporting accommodation is heavily booked for the upcoming spring school holiday period, and this is reflected across the region, with Gloucester providers indicating they are also heavily booked, said Council’s Manager Growth, Economic Development and Tourism, Deb Tuckerman. This is wonderful news for businesses and the MidCoast region, keeping our economy strong and protecting local jobs. Local businesses are proactively ensuring their COVID-safe plans are up to date and full measures are in place to protect everyone, with MidCoast Council assisting with free visits and producing a video to guide businesses in implementing their COVID-safe plans. And locals are being asked to support local business by being patient during the busy holiday period, as many businesses will be extremely busy. Restrictions means that they will need to limit numbers on their premises, and keep sign-in records for all customers. It’s everyone’s responsibility to be COVID-safe, to maintain social distancing and abide by all COVID regulations when in public places, said Ms Tuckerman. The COVID Safe Check-In is a new feature on the Service NSW app which provides a contactless method a QR code to record your visit to COVID Safe businesses.
