23.01.2022 Gotta love Sundays.... Had a great afternoon yesterday cooking in my wood oven. There is just something very soothing that you get from cooking with live fire and especially on a Sunday afternoon. As soon as you light that timber its like someone hits the pause button, all the sudden there is no rush and you start to relax. ... That sweet smell of smoke in the air ignites inspiration. Of course there was meat involved, A lovely butterflied leg of lamb but I really want to talk about is the sides. Lemon potatoes, so good and went extremely well with the lamb. Heres a quick run through of how I did this awesome side dish. Firstly I boiled about a kg of small potatoes til soft. This is an important step as starting off with the potatos soft speeds up the cook time to bring it in line with the fairly quick cook of the lamb leg. A good dose of Olive oil in the baking dish then finely chopped garlic, onion, fresh oregano and thyme. I then Peeled and sliced a lemon and put them on bottom along with some salt and pepper. Drain potatos and let cool for 10 minutes in a colander to let the skins dry out. Put the potatos in the dish and use a masher to squash them a bit. This allows more flavour to get inside the potatos as well as adding more surface area to maximise the crunch. Squeeze a whole lemon over all over the potatos, dont be shy here the more the better. Give it all a good drink of olive oil then more salt and pepper. I put a wire rack over dish to sit lamb on so lamb fat drips into the potatoes just adding to the flavour. With the potato already soft they will cook at the same speed as the lamb. Into the wood oven at about 200c until lamb hits about 60-65c internal temperature. Rest the lamb and plate up the potatoes, some fresh chopped oregano and another good squeeze of lemon over the top and you are done. For some freshness to the meal I put together a simple salad of cherry tomatoes, buffalo mozzarella and rocket with a light coating of balsamic vinegar. A super punchy garlic sauce on the side and that was a fantastic late lunch on a beautiful Sunday afternoon. Give it a go, so easy and so tasty.

14.01.2022 Sichuan hot pot sausages with scallops.. Not all sausages are designed to go in bread! Someone has to try all these new snag creations of Billys!! Tough job, ha. ... Knowing the flavours of this sausage I thought it would lend its self perfectly to the delicate and sweet meat of a scallop, I was right. This combination was awesome, very simple too. Loads of flavour in the sausage and when that little bit of oil bleeds out of the cut sausage you dip the scallop strait in!! Cook these sausages slowly or bake them. You dont want aggressive heat as they will pop and loose the flavoursome juice. The scallops we simply done hot n fast in a pan with some sesame oil. Definitely an impressive light meal or starter for a dinner. Open 7 days a week

First up is some thinly sliced wagyu, then comes the waffle fries for some potatoey goodness. Next is the flavour bomb, chimichurri, a mix of oregano, parsley, chilli and garlic, served in a crunchy long roll @ $14. The zingy chimichurri with the richness of the beef is absolutely killer!!...
