22.01.2022 Artichokes are a vegetable that take me back to my childhood. My mother would cook them whole and we would eat them as an entire meal. They are at their peak at the moment and I couldn’t resist getting my hands on some. I cleaned and pre-cooked them first. Then finished them off with a gratin of breadcrumbs, chilli, garlic, parsley and Parmesan. Served with lots of lemon .
