18.01.2022 Rocket fuel. We love using aromatic wild rocket flowers in dishes at this time of year. You can currently enjoy them with grilled arrow squid stuffed with fermented potato on our pescatarian set menu.

06.01.2022 Spring lamb grilled & slow-roasted over fire with native balm mint bush, caramelised yoghurt and horseradish. We've loved the response to the new spring lamb dish on our set menu. So much so that we've decided to make it available to order individually too. Available online and via phone orders.

06.01.2022 Detail reigns supreme. 'Richly textured, peach-coloured walls are detailed with cave paintings of hunter-gatherers before giving way to original brickwork and blonde-wood joinery. Detail reigns supreme.'

04.01.2022 Pelargonium australe (wild geranium). There are around seven Australian members of the genus with pelargonium australe the best known and most widespread here in Victoria. Taking its name from the Greek 'pelargos', referring to the stork-like shape of the fruit, and 'australe' meaning 'southern' (in reference to the population distribution across the world), the wild geranium is well known for its bitter, tannic qualities and can be found in our new pastrami-spiced kingfish dish.

02.01.2022 @johnnycookson looking pretty chuffed with this bull kelp haul from Port Phillip bay this morning. Bull Kelp form the basis of important ecosystems on the bay. These are highly productive areas that expand the food web of rocky reef communities. Growing in large groups called ‘forests’, bull kelp serves an important roll as nursery areas and sanctuaries for many species providing shelter from predators and the strong currents in and around the bay.
