23.01.2022 Carrot, ginger and garlic soup with coriander 1 tbsp of coriander seeds 2 tbsp of peanut oil 1 large onion... 4 cloves of garlic chopped 2 tbsp Fresh ginger 1 kg thick cubed carrots (peeled) 1.5litres of Vegie stock ( I make mine so less salt) 80g uncooked guinoa 240 ml hot water 1 tbsp chopped fresh coriander 1 fresh lime juice 1. Ok so we fry off the tbsp of dries coriander seeds in a fry pan - no oil till they smell good - it doesn’t take long. Pop in a mortar and let cool 2. Heat your oil in a large saucepan cook onion , garlic , ginger, and ground coriander seeds then add carrots, stock , salt and pepper to taste bring to the boil and cover and simmer till carrots are soft so 40mins approx 3. Wash you quinoa seeds in a sleeve and drain 4. Once soup is soft then purée this and then add extra hot water and quinoa and cook for approximately 10 mins 5. Remove from heat and serve add a sprinkle of fresh coriander and squeeze of juice.... then enjoy This is a big serving so about 4-6 persons I half this for me and hubby Let me know what you think and I always do it with a glass of wine while cooking! Must be hydrated always

The group will now meet on the 4th Wednesday of each month and welcomes patients, carers and supporters from any local cancer treatment facility. The Austin Hospital is directly opposite the Heidelberg Railway Station so public transport is available.
