13.01.2022 MACCABI - FOOD 4 LIFE Sesame crusted tuna, lime aioli, coral lettuce Maccabi LIFE has teamed up with Roquette Catering to bring you a wide range of "nutritious... and delicious" recipes that you can quickly and easily create at home. Sesame crusted tuna, lime aioli, coral lettuce Yields approximately 20 slices Ingredients 500gm Fresh yellow fin tuna black and white sesame seeds Seasoning / salt and pepper 1 fresh lime 2 tbsp of honey 100gm mayonnaise Coral lettuce leaves (washed) Method Step 1 - Prepare the fish With a sharp knife cut tuna into steaks or square loins Season with salt and pepper or your favourite seasoning mix! Lightly blend sesame seeds in a food processor (this allows sesame to form a delicious crust on the tuna) Coat the tuna on all sides with sesame mix and refrigerate to firm up whilst doing next step Step 2 - Lime aioli In a small bowl, zest and squeeze the juice of the lime. Add honey and mix well to combine Whisk in the mayonnaise and season to taste Step 3 - Pan sear the tuna Preheat a non-stick pan on medium/high heat with a splash of vegetable oil. Using a pair of tongs place the tuna into the hot pan (position tuna away from you to avoid hot oil splatter). Flip and rotate the tuna, allowing at least 15 / 20 seconds per side. Rest for 5 minutes and slice to your liking! Step 4 - Plate up Place lettuce leaves on a platter Lay the sliced tuna onto leaves and lightly season with salt and pepper Drizzle with lime aioli (avoid adding too much to preserve the beautiful freshness of the tuna!) Coach Emily Szwider from the Maccabi Basketball club delivered a fantastic lesson including dribbling, passing and shooting drills. This is another school sport program supported by the Maccabi Henry Jolson Pathways Program.
