12.01.2022 Aussie Christmas rum balls. We call them Aussie rum balls as we use macadamias and Bundaberg rum :-) Recipe 100 grams macadamias 250 grams Arno Shortbread ... 395 gram can sweetened condensed milk 100 grams desiccated coconut 1/4 cup cocoa 1 teaspoon cinnamon powder Grated orange rind from one orange 30 mls or 60 mls Bundy rum depending how strong you like, we used 60 mls but taste test after 30mls Extra coconut for rolling or use chocolate sprinkles for rolling Method Process biscuits and macadamias in food processor just for a minute or so until forms fine crumbs. Transfer to a large bowl and add coconut, cocoa, orange rind and cinnamon. Mix to combine. Then add wet ingredients of rum and condensed milk and stir to combine. Depending on the texture you can refrigerate mixture for 5 minutes to firm slightly then roll into balls. Coat rum balls in extra coconut and/or chocolate sprinkles to finish. Refrigerate again to firm properly. Keep refrigerated until ready to serve. These make a great Christmas gift or keep handy in the fridge for when friends pop by. See more
