23.01.2022 In February I had the honour of making my beautiful friend's wedding cakes. I made three brown butter cakes stuffed with fresh figs, spiced balsamic poached dried figs, and goats cheese icing. Each one was decorated slightly differently using fresh fruit, herbs, pink peppercorns, and a touch of edible gold. 10.01.2022 This went out for a gorgeous lady's 60th today. Layers of vanilla cake drizzled with raspberry syrup, hazelnut dacquiose, raspberry curd, fresh raspberries and toasted hazelnuts, and topped and filled with white chocolate ganache (tinted dusty pink). Topped with seasonal fruit, roses, herbs etc.
04.01.2022 Brown butter baby cake, filled with figs poached in balsamic, honey, black pepper and spices (and their delicious syrup) and ripe fresh figs - topped with goats cheese icing. Sort of like the flavours of a cheese plate in a cake - but in a good way!
