24.01.2022 We already carry beautiful, all Aussie rock, fine and flake sea salt from @olssonssalt, but when I heard these guys had teamed up with @pialligoestate to create a slow, red gum smoked salt, I had to grab me some of that! The idea for Olsson's to produce a smoked salt goes back to around 2013 when @ross_lusted (of Sydney's now sadly closed The Bridge Room) approached Olsson's about making something unique and a bit spesh. They teamed up with @charliecostelloe of Pialligo Estat...e and over the next three years developed a slow smoked sea salt that is simply stunning. The salt is cold smoked over river red gum for some 72 hours, a traditional method that stems back as far as the Vikings! This imparts the Eyre Peninsula salt flakes with a rich and deep smokiness, but without the bitterness you might get from a hot fire. The salt is incredibly versatile; try adding to unsalted butter to create your own smokey salted butter for smearing on corn cobs, adding to popcorn, or just on sourdough! This is a great finishing salt that works beautifully on a tomato salad, or just sprinkle on your protein of choice for added smokey flavour. Let your imagination run wild... See more

22.01.2022 Twelve days of Christmas. Day 7 Baker’s delight. I took up sourdough baking a few years ago when I was between (IT) jobs and caught ‘the bug’. Indeed, it’s possibly where the seed of MAD first started to sprout; when I started looking into sourcing produce for the store, the first products I looked at were baking flours. So today’s theme is a gift to inspire the would-be baker in your life to get their starter going and get baking (we have preserve jars (and flours!) that a...re perfect for your starter). Believe me, once they tear off a hunk of freshly baked, warm sourdough, dip it into our premium, cold pressed olive oil (pressed from Manzanilla & Paragon varieties) and sprinkle it with a smattering of our Olsson’s Red Gum smoked salt, they’ll never buy store bought again. And to keep their freshly baked bread, well, fresh, throw in an Aussie bread bag. The producers are passionate about sustainability, focussing on natural produce that is pesticide free. 18.01.2022 I’ve mentioned before that one of the best things about my job is getting to meet some of the amazing suppliers for our store, and the inimitable Jessica Pedemont of @artisanchocolate fame is no exception. She has just recently partnered with Brian Atkin of @southpacificacao, a small cacao company supporting local farming communities in the Solomon Islands to provide access to premium chocolate markets that gives those communities a better and fairer wage for their cacao. Jes...sica dropped into MAD a few weeks ago and suggested we could work together on a fruit dipping project in the run up to Christmas. Genius!, I thought. So fast forward to this week, and this is us checking over the first batch at her incredible chocolate factory and outlet in Haberfield (I couldn't help but think of Willy Wonka in there!). We’ve taken some of your favourite fruits from the shop (figs, Aussie apricots, mango, pineapple, peaches and of course our juicy pears) and dipped them in their incredible dark chocolate. Don’t they look amazing!? Justin was one of the first suppliers I had the pleasure of meeting when we first started on our MAD journey, and it’s been great working with this Dulwich Hill business ever since. We started with just a few of his range when we opened back in April; that’s now expanded to ten, that includes all the relishes you could shake a stick at (although I prefer to add them to my food than stand around shaking sticks at them whateve...r floats your boat), a pear, vanilla and whisky jam of considerable renown, a spiced cranberry and port jam (very apt for this time of the year) and a smokey chipotle honey made with a rescue honey from @amberdrophoney great on roast veggies, or put a spoonful in the water with carrots and boil off to give a smokey honey glaze yum! I baked this one's twin this morning but it was a little under proofed so I left this one to proof in the fridge all day and baked it when I got home. All good things... 05.01.2022 We've now be open for almost six months, and the long awaited return of John and Glenn's amazing @summerhillhoney has served as a reminder of when we first started selling their honey when we opened, and given me pause to consider how much has changed, how much I've learnt, but also the things that are still the same. I won't dwell on the world events of the last 6 months that have been a horror show for many; I'm grateful for where we live (not just Australia, or even NSW bu...t in particular Summer Hill and the wider Inner West) and the inner west people that have been and continue to be of immense support to my business. We're all very lucky to have come through this sh!t-show largely unscathed. I'm also very grateful for an amazing team (including my better half, Kylie) that have provided support, guidance and good humour to help make MAD an acronym for Making A Difference, and not Middle Aged Disaster. But while the shop (and I with it) continue to grow and develop, one thing I can tell you hasn't changed is Summer Hill Honey. It is still simply outstanding. 03.01.2022 Well that’s it for MAD’s first year (and my first in retail) and quite a year too! Opening in April was questionable timing to be sure, but we’ve battled on and finished on a bit of a high (although that might just be the champagne). Just wanted to say a few thanks, firstly to the great team at MAD who have embraced our philosophy with gusto and have made working (and hopefully shopping) here a real pleasure. Thanks also to the myriad suppliers big and small that have helped... supply our little shop with top quality products from across the country. And finally, thanks to the local community that have come out in throngs to support our little venture. The level of engagement we see with our customers is what makes this shop so much fun.
