24.01.2022 Frank Bonfante back in the ‘hood... special guest host on our Gourmet Safari Thursday walking tour of Haberfield today .. the owner of @franksfruitmarket for 45 years .. Frank filled in for new owner John Veluti and shared many tomato tastes including a green crunchy variety that perfectly matched his shirt.. so many varieties to try and lovely soft basil leaves to accompany.. note the shopping bag ..just 5$ at various shops in Haberfield.. plus the wonderful Dorothy from @p...aesanella_haberfield sharing stories with our distanced group and tastings of the delicious marshmallowey just made ricotta, the baked ricotta, bocconcini and delicious blue cheese wonder marscapone reale served with fig glaze. 20.01.2022 Expert marmalade makers please help. My tangelo marmalade so delicious but a bit runny. I soaked the fruit with the seeds in a muslin bag and then cooked slowly for 2 hours, added sugar and boiled until I thought the mix passed the saucer test.. but its still a bit liquid. Would you heat again with more seeds from next batches to come? Recook with jamsetter ? or chock it up to experience? It tastes so beautifully citrusy with that marshmallowy ricotta from @paesanella_haber...field @paesanellacheese and my new favourite sourdough rolls from @berkelo.au Thanks dear cooks... See more

16.01.2022 Vegetarian/vegan dream dish ...An afternoon making pumpkin kibbe with dear friends @jtsaba and sister Sandra and @tedywithone_d .. we roasted pumpkin and then mixed with fine brown burgul, lemon and orange zest, grated onion .. and then a mountain of greens (including Sandras homegrown tender parsley) wilted and cooked with spices and onions, mixed with chick peas and stuffed into pumpkin and burgul case and then fried to golden and served with labne.. and lucky we had Tedy ...from @thecocotribe with her creamy natural yoghurt mixed with a little tahini and lemon juice to serve. 11.01.2022 Oh the heady aroma of citrus transforming into marmalade. Loving this warm fragrant world.. My wonderful dad used to be the family marmalade maker and we savoured the last pot he made. Dad even called in to ABC Radio 702 when I was speaking with James Valentine about preserving and added a few tips on what to do. So today..while waiting for the safe moment to release new Gourmet Safaris, Im carrying on a family tradition after a visit to a stunning organic orange orchard i...n the Hawkesbury last week. The fruit is juicy and sweet and its so good to know that no sprays or chemicals have been used. 04.01.2022 I’m so blessed to meet inspiring families in the food industry who really care about what they do.. and yesterday I met Joanne Karpouzis whose family has run the wonderful Olympic Delicatessen and Butchery in Bankstown since 1956..named in the excitement of the Melbourne Olympics. Both parents are still alive and Joanne moves between the shop and their home, looking after them. Her dad Panagiotis loves to visit the shop and say hello to customers who’ve been coming for 60 yea...rs. That spirit of caring about what they do (and many of their small goods and traditional sausages are made on the premises) evident in Joanne’s question have you eaten? Yes.. but always researching.. so I tasted delicious ham, salami and olives. The Karpouzis family are celebrated in a fabulous book by Vassilis Vasilas ‘Beyond the Shop Windows and Counters’. 04.01.2022 Two acts of kindness .. one some home grown herbs from my beautiful neighbour on my doorstep and one from across the world. Ive been sent the wonderful new cookbook from @ottolenghi and @ixta.belfrage called Flavour...a further celebration of vegetables from this culinary rockstar whom I was lucky enough to interview at the stylish Melbourne Town Hall on his last book tour. Before we went on stage Ottolenghi popped out to see the huge queue of people lined up down the st...reet. Wow .. makes me feel so special, he said. Australia is such a joy to visit. ...and then backstage as we heard ourselves being intro-ed, he held my hand like an excited child as thousands waited to hear him speak. He was so charming, humble and engaging and you could just feel the audience responding as he spoke. A career highlight for me. Im so thankful to the kind book fairy who sent me Flavour which Im reading and getting excited to cook from. One benefit of the pandemic - time to really immerse in good books esp cookbooks..and cookbooks with ribbons to mark favourite recipes. This book has added some much needed magic to my day. 03.01.2022 Ive been fortunate that much of my working life had been spent in kitchens making delicious foods from around the world.. today Im my own kitchen with dear friends preparing a traditional Lebanese dish that will be part of a special fundraiser to raise funds for the Red Cross in Lebanon.. even better is that thing Ive missed - that special camaraderie that happens when women gather in a kitchen. 01.01.2022 Daydreaming of my other home ..in Greece. This week we would have been hosting a group of food loving Australians through 4 Greek Islands. Ive spent some of this afternoon writing a foreword for a brilliant new cookbook from a friend on one of the islands and opening photos and immersing myself - right now Im swimming in that perfect buoyant water and eating octopus as the sun sets.
