24.01.2022 Homemade rice puff bars Rice puff bars are very popular with kids of all ages. Now you can make your own with this easy recipe that includes Rice Bubbles, marshmallows and 100s and 1000s. Makes 16 bars... Ingredients: 6 cups Rice Bubbles cup 100s and 1000s 1 pkt (250g) marshmallows 125g unsalted butter, melted Grease a 16cm x 26cm slice tray and set aside. Chop 1 cup marshmallows and combine in a bowl with Rice Bubbles and 100s and 1000s. Melt remaining marshmallows in a heat-proof bowl in the microwave (on high for 15-20 seconds). Add melted marshmallows and melted butter to the Rice Bubble mixture. Stir well to combine. Transfer mixture into tray and press down with the back of a metal spoon. Refrigerate until set, then cut into 16 bars. Store in an air-tight container in the fridge

23.01.2022 No-bake vanilla slice This no-bake vanilla slice is perfect for summer, when you don't want to heat up the kitchen with the oven. It has a delicious Lattice biscuit case with a creamy custard filling and a passionfruit icing. Ingredients:... 2 x 200g pkt Arnott's Lattice Biscuits 2 x 100g pkts Cottee's Vanilla Instant Pudding 600ml thickened cream 300ml milk Icing 1 cup icing sugar, sifted 3 tbsp passionfruit pulp 25g butter Grease, then line a slice tin with baking paper. Place a layer of lattice biscuits on the bottom of the tin. You may have to cut some biscuits to fit. Using a mixer, whip the instant pudding, cream and milk until it has a smooth creamy texture. Pour over the Lattice biscuits and tap the tin on the bench to level the mixture. Lay more Lattice biscuits over the top. In a microwave-safe bowl, place the icing sugar, passionfruit pulp and butter. Microwave on HIGH for 30 seconds and mix together well. Pour over the biscuits and spread evenly. Refrigerate for 3 hours or until chilled. Cut into slices using the outlines of the biscuits and serve

Ingredients:... 1 cup self raising flour 1 tbsp sugar 1 egg 3/4 cup milk 50g butter, melted In a bowl mix flour and sugar. Beat in the egg and then milk at little at a time until batter is smooth and lump-free. In a hot pan or flat grill, brush butter over cooking surface and pour 1/4 cup measures for each pancake. When large bubbles form on the surface, flip over and cook until lightly golden on the other side

12.01.2022 Invisible apple muffins Ingredients: 2 cups self raising flour 1/2 cup caster sugar... 1/3 cup (80mL) olive or vegetable oil 1/3 cup milk 2 eggs 1/2 teaspoon vanilla extract 2 medium apples, peeled and grated 1 teaspoon cinnamon 1 teaspoon caster sugar, extra Preheat oven to 180C and place paper cases in muffin tray. Sift flour into large bowl, add caster sugar and mix well. In a glass jug, measure out oil (to 1/3 cup), add milk (to 1/3 cup), eggs and vanilla, whisk to combine. Pour liquid into dry ingredients, add grated apple and stir or beat well to combine. Sprinkle with combined cinnamon and extra caster sugar. Bake for 20-25 minutes until a skewer inserted into the muffin comes out clean Bake for 20-25 mins until golden

07.01.2022 Mels Butter Cake 150 g butter, softened 1 teaspoon vanilla essence 3/4 cup sugar... 2 eggs 1 1/2 cups standard plain flour 3 teaspoons baking powder 3/4 cup milk, approximately icing sugar Cream butter, vanilla and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Sift flour and baking powder together. Fold into creamed mixture. Add sufficient milk to give a soft dropping consistency. Spoon mixture into a greased and lined deep 20cm round cake tin. Bake at 180c for 35-40 minutes or until cake springs back when lightly touched. Leave in tin for 10 minutes before turning out onto a wire rack. When cold dust with icing sugar. Such a great cake , enjoy!

02.01.2022 Hey everyone, just want to say sorry for being so slack on here lately, for those who dont know we are moving back to NZ in a little under a month so we have been packing tidying and sorting stuff out - Ive found a couple of AWESOME replacements to take over the FB page... so that is going to be all up and running soon....
