23.01.2022 Peanut butter chocolate is my weakness so this recipe is a much healthier alternative to the store-bought one. It's super easy to make, and if you already have a chocolate recipe that you like you could use that. I use organic peanut butter with nothing added - which is how peanut butter should be... I mostly use honey when I make chocolate but I didn't have enough so I used maple syrup instead Cacao butter can be pretty expensive so if you wanted to keep the cost down you could replace half of it with coconut oil (but keep in mind that they will melt quicker when at room temperature. Once you've got a basic chocolate recipe you can have a play around with all sorts of flavours. Some of my favourites are: orange with almonds crushed coffee beans and dried figs peppermint and toasted coconut chocolate with dulce de leche filling Happy cooking

22.01.2022 After a recent GP visit, I was advised that I need to work on improving the function of my vagus nerve. The vagus nerve controls and affects many bodily functions, quite often without you even realising. For myself, the primary aim of improving the function of my vagus nerve is for digestion and stress. Two things I have struggled with these past few months.... My GP suggested that I gargle several times a day to strengthen my vagus nerve. 22.01.2022 Well, its certainly been an eventful 2 weeks! First I trapped Mollys tail in the car door and she needed stitches and next, I slipped and broke my wrist. So as far as cooking goes there hasnt been much happening in my kitchen - other than reheating meals that people have cooked for me

20.01.2022 Here in Oz we're heading into our warmer months so I thought I'd share a super easy, dairy-free strawberry milk/smoothie. Have a play around with flavours. I reckon raspberry and peach would be yum - sort of peach melba(ish). Although I haven't seen peaches at the farmer's markets yet as I don't think they're quite in season. Which means you'd have to try and get hold of some organic frozen peaches or maybe you preserved some when they were bountiful

20.01.2022 I thought I'd share my quick and easy recipe for a choc chip with you again. They're great to have with a nice cup of for morning/afternoon tea I think next time I make these, I will increase the choc chips slightly and reduce the sugar a bit. 19.01.2022 Dinner doesn't have to be fancy to be delicious and nutritious. A quick meal of pan-fried eye fillet Full Circle Farm with sweet potato, mushrooms and silverbeet (from the garden) According to https://www.facebook.com/JudeWholefood/ if you add dairy to your leafy greens it will help buffer the oxalic acid in them. Oxalic acid is known as an anti-nutrient which interferes with the absorption of essential minerals. Which is why I always add a good knob of butter when I cook silverbeet.

17.01.2022 Sunday roast - and pork belly has to be one of my favourites. The great thing about pork belly is that once its cooked for half an hour or so in the oven on high, you can turn it down low and then head out for the rest of the day. When you come back in not only does the house smell AMAZING but dinner is almost ready. You just need to make the gravy and lightly cook some vegetables to serve it with. Yum

16.01.2022 If you love spicy food then you might enjoy the tagine that I cooked a few weeks back for some dear friends of mine. If you like 'spicy hot' then you could easily add a little bit of ground chilli, or chopped fresh chilli, it's entirely up to you. ... The recipe is for beef but you could use lamb instead, or even make it vegetarian if you prefer. 16.01.2022 I said that I would be attempting to make a dairy-free and refined sugar-free creme brûlée this weekend. I'm happy to say that they were a success. Still a bit of tweaking to do but definitely still good to try now. I used my usual cashew/macadamia milk, but you could use whatever milk you have. With the coconut sugar topping - I did grind my sugar first to make it finer since coconut sugar is quite coarse and it would take a fair bit of heat to melt and caramelise it. Next t...ime I would do another layer. I always err on the side of caution at this stage as it is so easy to completely burn the caramel, which is why I 'build' up my layers. When I get the time, I'll have a play around cooking it on the stovetop and write up the recipe for those of you without a thermomix.

12.01.2022 I had one chicken breast Grace Springs Farm leftover so turned it into this tasty little dish. You could change the fillings to suit whatever you have in the fridge. I'm thinking something with sun-dried tomatoes would be yummy I had a Red Leicester cheese in my fridge, but you could use whatever cheese you've got. Basically, just have a play around with flavours.... And of course, I used my coriander pesto that I made the other week

As Dr Mark Hyman, MD says it's those added sugars that are a bigger part of the problem, sugars that we may not even be aware are in our foods - foods that if we made from scratch you wouldn't entertain the idea of adding sugar... 12.01.2022 The coriander in my veggie bed has gone bonkers So before it goes to seed I harvested some and turned it into pesto When I make basil pesto I usually follow a more traditional recipe which calls for parmesan cheese I opted to make this one dairy free but I cant see any reason why you couldnt add some if you wanted to.... I used macadamia oil in this one as it has quite a light flavour and I thought that olive oil might be too strong and overpower the flavour of the coriander. In my head, it seems pretty simple but the reality might be just a runny custard mess (which would still be ok to eat - waste nothing I say). 06.01.2022 Please take the time to read this post, written by a farmer local to me Grace Springs Farm. Our farmers already have so much to deal with, their resilience amazes me. Let's keep supporting our farmers even if for now it's just by showing our support, and encouragement to them.

06.01.2022 This Summer has thrown more than the average challenges the way of farmers. From drought to fire to heat waves to extreme wet and flooding. It has been crazy. ...We have found it hard, but sometimes I think it is even harder watching your farming friends go through difficult times. We have a 'Holistic Context' (a document that gives us a framework for making the best decisions for our family, farm, community and environment) for our business and part of that context is for us to be part of a 'thriving farming community'. Right now our market gardening friends are really hurting. As grass farmers that raise livestock, we are able to move our animals to a safe location, or higher ground. It is hard work, but it is possible. For our market gardening friends they just don't have that option. We have recently seen Blue Boat Farm Gate (Medowie) & Purple Pear Farm (Anambah) have to cease vegetable production due to a lack of water in the Newcastle area. We are seeing posts from Fanelli Organics, Mangrove Mountain & Delightfully Fresh Organics (Mangrove Mountain) recently as they try to recover from the fires and floods with reduced produce for their customers. Last week we heard that our friends Kieran and Dylan from Fiatarone Farms & Matcham Valley Veggies won't be doing veggie boxes or attending Avoca Beach Farmers Market anymore. :( They are going to be missed soooo much. The Giving Farm - Central Coast Veggie Patch had flood waters cover their turmeric and ginger completely. And last weekend we saw Michael and Kelly's market garden at Little Feet Gourmet completely under water. Seven years of building soil and growing vegetables without chemicals washed away. Even their beehives went in the freak flood. They have been supporters of our beekeeping workshops and it has been wonderful seeing how quickly their hive numbers, and skills have grown this season. We are absolutely devastated for them. They have lost greenhouses and around 90 garden beds. The work to recover is unfathomable. What can you do? Visit a farmers market and buy directly from your farmer Order a veggie box directly from the farmer Help Little Feet Gourmet get back up on their feet through a crowd funding that has been organised for them. (Link in comments). Follow a market gardening page, support them and learn more about what it takes to produce chemical free veg. . We are hoping that this is the end of the crazy weather this Summer and that things get easier for our market gardening friends. We love what you guys are all doing!!!! Hang in there!! . 05.01.2022 I went to the local farmers market yesterday Avoca Beach Farmers Market and I'm keen to try a couple of new finds that I came home with Usually, when I cook a curry I do make it from scratch but I saw this organic curry sauce and thought I'd give it a try. Love Yum Real Food makes delicious food for those following a Paleo, AIP and Vegan diet.... They also have a selection of yummy banana breads. It's always exciting when you find suppliers of real food that has been made with love I love my local farmers market

03.01.2022 A little bit of self-worth inspiration for those of you who may be lacking in this area. And yes I am one of those people who completely lack self-worth, but I am working on changing my mindset. For our own health & well-being, we have to learn to love ourselves and to take care of ourselves. It's been a bit of a roller-coaster week for me. I haven't been well, and I think that just amplified everything that is going on for me right now. Just when I was finally feeling a tiny... glimmer of, 'I've got this, I can do it!'. Wham, I'm back at the bottom of that painful pit, and I knew it was time to talk to someone. So today's quote comes after a counselling session and a little bit of 'homework' that I need to do. I hope to get back in the kitchen this weekend and do a little bit of cooking. Have a wonderful weekend

I was going to write this as a blog but thought Id do a quick video instead and that way I can give you a bit of tour of my kitchen. 01.01.2022 Everyone should have a jar of rosemary salt in their kitchen - it adds so much flavour instantly. Add it to soups, casseroles, roasted vegetables, mixed with butter or ghee and rubbed all over a chicken ready to be roasted. It's so simple to make. Happy cooking

01.01.2022 Well, I did say that there would be baking this weekend. Whilst this isn't technically' baking' - it is dessert so that's close enough for me Last night was dinner with friends celebrating one of their birthdays and I was chosen to take care of dessert This is the cardamom and date tart from the cookbook 'Life-Changing Food, written by Jo Whitton & Fouad Kassab... It is seriously such an easy dessert to make and you could make it ahead of time and keep it in the fridge until needed. I haven't tried but I dare say if well-covered it would also freeze well (but you'll have to test that for yourselves) As always I modified the recipe slightly Instead of using just cardamom (as per the recipe) I also used organic ground cinnamon. The Life-Changing Food cookbook is full of great recipes suitable for a variety of dietary requirements. I'd highly recommend checking it out over on Jo or Fouad's page.
