22.01.2022 Xiao (Small) Long (Basket) Boa (Bun) There is said to be 2 stories of how these soup-filled dumplings came to be; ... Story 1 tells of a man named Huang Mingxian, owner of a restaurant called Ri Hua Xuan in Shanghai. Around 1870, Huang invented the dumpling by adding aspic to his pork mince. When steamed, the aspic would become liquid, creating a soup in the dumpling. Hoping to stun customers with the petite size of the dish, Huang sold his creation under the name NanXiang da rou mantou, meaning large meat-filled bun. As popularity of his creation increased the name quickly changed to Nanxiang xiaolongbao Story 2 comes from the Jingsu Province. In the 1700’s Emperor QianLong tasted the dumplings in Wuxi. On his journey home he travelled along the river and so was given the nickname of Youlong, meaning Swimming Dragon. Gifted the Xiao Long Bao by locals, Emperor Quian Long, loved them so much they become famous. Some even believe the long in xiaolongbao should be dragon rather than basket in his honour. Either way, we are glad to be able to recreate these delicious parcels of taste. #historyofcooking #xiaolongboa #closedforcovid
