09.01.2022 Want to know the secret to juicy lamb? When cooked properly, lamb is naturally juicy, succulent and flavourful, so you don't need to try too hard to create a delicious lamb dish. BUT....... Resting your lamb is key! When you allow lamb to rest for a few minutes after cooking, the juices are redistributed throughout the meat, making it melt-in-your-mouth tender and flavoursome. If you cut into your lamb straight away, those juices would spill out onto the cutting board instead. Once cooked, simply pop your lamb onto a warm plate, cover loosely and allow to rest.
