I like my bread to have character and nutrition, but also look amazing. Spelt is great for that! Below is the lowdown on why spelt grain is an all time favourite. Enjoy, Mardi. * #cookcreateconnect #eatrealfood #sourdoughobsession #maleny #homebakersguild #sourdoughbread #wholegrainmillingcompany #breadlove... #vegan Spelt Grain: It is classed as an ancient grain because it hasn’t been hybridised or modified and this grain is one of my favourites to use in bread making. It’s still part of the wheat family so it’s NOT gluten free, and even though it has a higher gluten content than wheat, it seems to be popular choice for people with gluten/wheat intolerances. This is largely due to the lower level of a protein called gliadin, which is known to attribute to gluten intolerances. When fermented into sourdough, it is a powerhouse of vitamins and minerals such as Phosphorous, Vitamin B3 (Niacin), Magnesium, Zinc, Iron to name a few. The bread bakes into a caramel colour, with a nutty flavour, which makes the best toast! Or just slather it in butter!! Yes please! @ Maleny, Queensland

17.01.2022 Today’s bounty. Three beautiful sourdough loaves fresh from the oven. Even after 6 years of being a home sourdough baker, I still get a thrill when I see my finished loaves. This batch is 50% wholemeal, 50% wheat.

17.01.2022 I always use the best quality organic ingredients when making sourdough. I ONLY use filtered water, especially when feeding my starter, because town water contains chlorine which can destroy my precious wild yeasts and good bacteria. When choosing flours, look for a protein % of 12+. These Demeter Farm 5kgs bags are great from @wholegrain_milling. It will make the best bread. (You can find this info on the nutrition panel on the packet). And lastly, I try to stick t...o one particular brand of flour because some can take more or less water and that can affect the consistency of your loaf. 17.01.2022 Last year I attended my first @primalinfluence workshop which was on Natural Soap Making with Aimee. It was soooo informative and fun. Yet another useful artisan skill I have in my repertoire. She has another workshop on this Saturday so if you want to learn how to make beautiful healthy soap using natural ingredients, (and escape the weekend rain) then I highly recommend this workshop. 10.01.2022 I love baking my bread in a Dutch oven. They create the perfect environment (super intense heat!!) required for baking outstanding bread. It’s an oven within an oven so to speak. How I do it is below. Enjoy. Mardi * #cookcreateconnect #eatwelllivewellbewell #sourdoughobsession #sourdoughlife #lecreuset #sunshinecoast #maleny DUTCH OVEN / CLOCHE BAKING METHOD:... Turn your oven up to the hottest it can go (approx. 250 degrees). Take out all other trays, except the one you’ll place the Dutch oven/cloche onto. Place the Dutch oven/cloche inside with the lid on it on so it can come to temperature. When the oven reaches temperature, it’s time to get your loaf ready. Dust the top of your loaf with flour and with a very sharp serrated knife or razor blade, make a couple incisions across the top. This allows the stream to escape and gives your loaf a unique pattern. NEXT: Carefully take the very hot cloche or Dutch oven out of the oven and place it on a heat resistant surface. (PLEASE USE DRY OVEN GLOVES OR TEA TOWELS AS YOU CAN EASLIY BURN YOU FINGERS!!) Remove the lid then gently lift the baking paper with the dough and place it inside, quickly replacing the lid and put it back into the main oven to cook on the high temperature for 15-20 minutes. After 15-20 minutes, reduce the temperature to 190-200c, remove the lid and bake for a further 35 minutes or until it is golden brown. To test if it’s cooked, insert a probe thermometer into the middle of the dough and if it registers 95 degrees, your delicious loaf of sourdough is ready, and all of your hard work has paid off. Take it from the oven and place your loaf on a wire rack to cool. @ Maleny, Queensland
