25.01.2022 Bulk gluten-free muesli prep. Not all gluten-free muesli’s are the same. Mine is high in protein with amaranth, quinoa and buckwheat, high in fibre with the addition of psyllium, and low in sugar with just a few low glycaemic blueberries and goji berries. It’s also delicious and quick and easy to make. You don’t have to be gluten intolerant to consider including some gluten free meals. When writing my book I wanted to include this quote and so I contacted the office of the Dalai Lama to respectfully ask for his permission to use the quote. I received a gracious and prompt reply which told me that this is not a quote from His Holiness. Suffice to say I left it out! I do like it though. It reminds us to live in the present and to always nurture and value our health.

23.01.2022 My version of pulled pork. I have swapped out some of the unhealthy ingredients often in pulled pork to make the dish more anti-inflammatory and it tastes so good!. I cooked it in the pressure cooker this time and it cooked for just one hour (you can also do it in the slow cooker). While in isolation or as I prefer to call it, hibernation: *get some vitamin D which is good for the immune system. Sit near a sunny window with a good book or a cup of tea.... *Do some gardening, its very grounding and grounding is what we need right now as it will calm us down. *Excercise, excercise, excercise. Some of my favorites to do at home-skipping rope (doesnt take long and is great cardio, excellent for the abs), running up and down my stairs, lots of tricep work because tuckshop lady arms are not anything Im letting happen anytime soon (I do tricep push ups and tricep pushdowns using a raised garden bed). *Eat an anti-inflammatory diet. Sure, you are going to eat some comfort foods but that can fit into to your 20% treat foods. The other 80% you can focus on anti-inflammatory foods- think vegetables (the more colorful the better), herbs such as tumeric and coriander, good fats such as avocado and fish, legumes, and complex fibre such as quinoa and black rice. *Theres lots you can do to support your health during this time. Perhaps I should say excess bread keeps me in business..as bread is not all bad its just that people often have too much. My advice is to put bread into the treat category of foods in your diet and just have a quality bread once in a while. 07.01.2022 Glazed Salmon served with soba noodles and home grown greens. Combine a clove of garlic grated, a 2cm piece of ginger grated, the juice of half a lime, 2 tablespoons tamari and 1 tablespoon oyster sauce. Season both sides of the salmon with salt and pepper and add 3 drops of sesame oil to a hot frypan. Cook for 3 minutes on each side and then add the sauce to the pan and cook for a further minute. Garnish with black sesame seeds and serve with the cooked soba noodles and home grown greens. Garnish the dish with fresh coriander and chili to taste. So quick and delicious. Enjoy (coriander is a potent heavy metal chelator so I add lots as a garnish to my dishes ) #antiinflammatory#salmondinner#coriander

02.01.2022 This is what I drink when I am intermittent fasting. Apple cider vinegar in water (1 teaspoon in 500mls water). What is intermittent fasting? Basically it gives your body a rest, and intermittent fasting reduces inflammation. Eating is a lot of work for your body and it tends to increase inflammation. Thats fine of course, but many of us eat too much and too often which increases inflammation. ... When you eat your dinner, finish by 7.30pm and fast for 15 hours. Dont eat breakfast until 10.30 am (or change the numbers accordingly). When you get up, drink apple cider vinegar in water which will give you enough energy and minerals to see you through a gym workout or work etc. Have your first meal at 10.30 am or 15 hours after dinner. This is a good way to kick off weight loss as inflammation tends to drive a slow metabolism. Also a great tool to use during the festive season which tends toward overeating and inflammatory foods.
