11.01.2022 Beautiful cheese by @jardinestate JARDIN ~ BAKED CURD - Truly an amazing cheese. Separation of curds and whey is created using pure lemon juice thus producing the lightest and fluffiest curds. The addition of fresh cream adds to the cheeses overall creaminess so that the cheese has an almost souffle like texture.... - Drizzled with organic olive oil and baked to create a soft brown exterior, the cheese is then sprinkled with chopped pistachios and a lashing of locally produced honey or for that savoury taste, we also do a sun dried tomato and balsamic reduction version. - When ready to consume, serve it warm (reheating for 10 - 15 mins at 120 C) this cheese makes an excellent but unique addition to any cheeseboard, served as an entree with toasted baguette or better still, a one off breakfast with a difference. 09.01.2022 this from @sarina_kamini When JD Kim told his Australian brother-in-law he was quitting professional cooking to start up his own kimchi business, the response was far from enthusiastic. JD’s concerned family didn’t think people were ready to be educated in Korean food - particularly in small town Margaret River - but JD was adamant. I really wanted to, JD recalls, insistent even now. Korean food culture isn’t known, not like Japanese and Chinese food. And JD knew tha...t wasn’t right. That the food of his homeland had something to offer to a Western Australian community he now calls family, 10 years after moving here from Korea: For a Korean eating kimchi is just like normal life. The home taste. Creating that family around his food has taken incredible focus. The past three, almost four years of running Margaret River Kimchi - and growing kimchi’s renown - has been a driven and deliberate endeavour. First the kimchi business and market sales. Next, an outside kitchen at events. Then a mobile kitchen, a food truck. Which is precisely when Covid struck. Just three months into his food truck operation, the purchase of which being the result of more than two years of work and savings, Covid shut everyone down. JD was really hesitant to talk to me because he didn’t want to come off sounding like he was struggling, or looking for sympathy for a business in a dip. After spending a few months working in the kitchen at Leeuwin he’s back working on his business. But the landscape’s different. The Perth Royal Show’s decision not to run set the precedent for almost every small country show in the greater south west region. So no Busselton Show. Or Bunbury. Or Margaret River Ag Fair. Events that facilitate food trucks are thin on the ground. And while everyone is crossing fingers for 2021, JD is realistic about what that means: For people in the hospitality industry 2021 means September 2021 - which means another year for us, JD says I’m sure I’m not the only one impacted. He’s grateful to be in WA. But the final step from food truck to restaurant, that journey just got longer. In these times, in this industry, sometimes it can feel heroic just to keep going. See more
