24.01.2022 With it truly starting to feel like winter and Melbourne being back in iso, warm up with Marias Gnocchi with Roasted Pumpkin and Goats Cheese! Super easy and ready in no time - the family will love it! . . Ingredients: 1kg of Maria's Pasta gnocchi (we have potato, spinach, pumpkin and mixed varieties!) ... 800g butternut pumpkin, peeled and cut into 2cm pieces Pendleton Olive Estate classic or robust extra virgin olive oil 12 cup walnut halves (alternatively you can use pine nuts) 100g Organic Times salted butter 1 bunch sage, leaves picked Approx. 100g Meredith Dairy marinated goats cheese Salt and pepper, to taste . . Method: 1. Preheat your oven to 200C. Place the prepared pumpkin on an oven tray and drizzle with olive oil. Season with salt and pepper. Roast in the oven, turning occasionally, for 20 minutes or until golden. Add the walnuts (or pine nuts) to the tray and roast for an additional 3-4 minutes, or until toasted. 2. Melt the butter in a frying pan over medium. Cook for 2-3 minutes or until the butter starts to brown. Add the sage leaves and cook for 1-2 minutes, until crisp. Remove from heat. 3. Get a pot of water on the boil for your pasta, salted to taste. Cook @mariaspasta gnocchi for 6-8 minutes, or until gnocchi rise to the surface. We recommend to taste your pasta before draining it to ensure a perfect cook! When ready, drain the pasta. 4. Toss the cooked gnocchi in the burnt butter and sage sauce. 24.01.2022 Looking for a quick and easy dinner idea during the week? This Spaghetti Carbonara will be ready in no time, using ingredients you can find at Marias! . . Ingredients: 3 Kossie's free-range eggs... 40g Floridia Cheese Parmesan cheese, plus extra to serve 2 sheets of Maria's Pasta fresh spaghetti (approx. 300g) Pendleton Olive Estate classic extra virgin olive oil 100g pancetta, sliced Pepper, to taste . . Method: 1. Put the egg yolks into a bowl, finely grate in the Parmesan, season with pepper, then mix well with a fork and put aside. 2. Place a pan over medium-high heat with a little oil. Add the pancetta to the pan and leave it to flavour the fat for 1 minute. Stir in the pancetta, then cook for 4 minutes, or until it starts to crisp up. 3. Cook the spaghetti in a large pan of boiling salted water until al dente, reserving some of the cooking water. Marias fresh spaghetti only takes 1-2 minutes in boiling water! 4. Drain and add the spaghetti. Toss well over the heat so it really soaks the lovely flavour, then remove the pan from the heat. 5. Add a splash of the reserved cooking water and toss well, season with pepper, then pour in the egg mixture the pan will help to cook the egg gently, rather than scrambling it. Toss well, adding more cooking water until its lovely and glossy. 6. Serve with a grating of Parmesan and an extra twist of pepper. Enjoy! . . Serves 2. . . Recipe adapted by Jamie Oliver See more

24.01.2022 RECIPE IDEA Stuck on what to cook during iso 2.0? Dont worry, weve come up with the perfect comfort meal using our Napoli sauce - Penne Alla Norma! Ready in less than 30 mins... . . Ingredients:... 2 eggplants, chopped into 2cm chunks 1 teaspoon dried oregano 1 teaspoon dried chilli flakes 2 tubs Maria's Pasta Napoli sauce 12 bunch of fresh basil, plus extra to serve 500g La Fabbrica della Pasta di Gragnano penne (lElicopenna) Floridia Cheese pecorino wedge Extra virgin olive oil Salt and pepper, to taste . . Method: 1. Grab your prepared eggplant and use paper towel to draw out the moisture. Set aside for 5- 10 minutes. 2. Drizzle a splash of olive oil into a large frying pan over a medium heat. Once hot, add the eggplant, oregano and chilli flakes, and fry for 5 to 8 minutes, or until softened and golden, stirring occasionally. Season to taste. 3. Stir in @mariaspasta Napoli sauce and add fresh basil. Reduce the heat to low and simmer gently for 5-10 minutes. 4. Get a pot of water on the boil for your pasta. Cook the @lafabbricadellapastadigragnano penne for about 10 minutes, or until al dente. We recommend to taste your pasta before draining it to ensure a perfect cook! When ready, drain your penne, reserving a cupful of the cooking water. 5. Add a good splash of the reserved water to the sauce. Next, toss in the penne, adding an extra splash of the reserved cooking water to loosen, if needed. 6. Serve with grated pecorino and top with remaining fresh basil. Enjoy! . Serves 4 . 21.01.2022 We constantly get asked "what is durum?" and "how is it different from plain flour?". Both types of flour have been used across Italy and around the world for centuries, however durum is a sturdier wheat which makes it ideal for making pasta! Durum (on the left) tends to be less starchy and higher in protein than plain 00 flour because of the way it is milled. 19.01.2022 We’ve got one more surprise instore to finish off the year...another recipe collaboration with @mangiabella! Our second recipe features our Roast Pumpkin & Almond Ravioli paired with a Sage Brown Butter Sauce - the perfect meal as we come to the end of a crazy year. Be sure to save the post for later and tag us in your recreations! . . Ingredients:... 500gms @mariaspasta Roast Pumpkin & Almond Ravioli 80gms @organictimes salted butter 12-15 fresh sage leaves 1 lemon @floridiacheese freshly grated parmesan Extra virgin olive oil (we love @pendleton_olive_estate) Salt and pepper, to taste . . Method: 1. Bring a big pot of water to the boil for your pasta. Cook the @mariaspasta Ravioli for about 15 minutes, or until al dente. We recommend tasting your pasta before draining it to ensure a perfect cook! When ready, drain your ravioli and reserve a cupful of the cooking water. 2. In the meantime, drizzle a splash of olive oil into a large frying pan over a medium heat. Once hot, add the butter and once it starts foaming add the sage leaves and fry for a few minutes. Be careful not to burn the butter or sage leaves. Once sage leaves are crisp, reduce the heat to low. 3. Next, gently toss the ravioli into the frying pan, adding a small amount of the reserved cooking water to loosen the sauce and ensure the ravioli are well coated. 4. Squeeze a generous amount of lemon juice into the sauce and serve with @floridiacheese parmesan. Enjoy! . Serves 2 See more

12.01.2022 Introducing our NEW bolognese sauce recipe! . It starts with a classic Italian soffritto... onion, carrot and celery gently sautéed in quality Australian extra virgin olive oil. Next we add lean, ground Aussie beef and cook it until it's golden. Then comes premium Italian chopped tomatoes and a little tomato paste. Finally, we season it with lots of yummy Italian flavours, including rosemary from our garden. Then we let all those flavours combine as we cook it to perfection. 12.01.2022 Meet The Cow - a grand old piece of Aussie ingenuity. . . She started out as Maria's first semi-automated packaging machine - but she was really just a set of fancy scales. We used to sit in front of her on a milking stool with a bag under the chute and she'd weigh the pasta and dump it out! It was back-breaking work (much like milking a cow!), but an advancement for us at the time. Prior to that, we'd scoop our pasta and weigh it in front of the customer in our shop. .... . Fast forward to the 2000's... as demand increased we had to ramp-up our production. So an engineering firm based in Red Hill, Victoria, gave The Cow her first makeover. She was extended to include a conveyor, made fully automated and engineered to incorporate the rolls of packaging film we use for our 500g bags of filled pasta. Holden car afficionados would appreciate that she even contains an accelerator pedal sensor from Holden! . . These days, when the Cow is being a "Daisy", she will package 20 bags a minute - when she is just being a cow, she only manages 10! And although our Daisy is a far cry from modern packaging machines that will fill 600 bags a minute, we are still fond of the old girl. She's part of our history here at Maria's Pasta and a great example of small business engineering ingenuity. See more

11.01.2022 What beautiful weather weve had this weekend! Im sure the dose of sunshine was just what we all needed. If you've enjoyed an outing to any of the parks around Melbourne, you may have noticed lots of people out foraging for mushrooms. While many of us aren't experienced enough to forage for our own, we can still enjoy a feast of fresh mushrooms from our local store. And there is no better way to savour them than in this Autumn Mushroom Tagliatelle pasta dish.

08.01.2022 Take mid week meals to the next level with Pauls Linguine and Prawns YUM! . . Ingredients: 2-3 TBS Olive Oil... 50-100g Leek chopped medium to fine 300g-400g Raw Prawns (wash and drain well alternatively you can work on 4-5 Prawns/person) ~500g of fresh cut pasta (we recommend our durum linguine) 1 tin tomatoes 1.5 teasp ground coriander 1 Clove garlic chopped fine (you can use crushed garlic) 1 Teasp salt (salt flakes are excellent) ~6 leaves fresh basil chopped 75-100ml Vermouth (e.g. Cinzano Bianco) Chilli to your liking (you can use dry, or alternatively use 1 or 2 fresh chillies finely chopped if you like) Cracked pepper, to taste A good handful of fresh chopped parsley . . Method: 1. Put a pot of water on the boil for your pasta, salted to taste. 2. Get a fry pan nice and hot. Add olive oil, salt, garlic, chilli and ground coriander to the pan. Get the prawns cook for around 2 or 3 minutes and get a nice colour going. Turn the prawns (if you want at this stage, use tongs). 3. Next, add the leek and cracked pepper. Once youve got the colour in the prawns, add the vermouth and give a stir. Then add the basil. Let this cook for approx 30 seconds and when the liquid has reduced a little you can add the tinned tomatoes and stir in. 4. Now its time to start cooking the pasta put your pasta in the boiling water. Maria's Pasta fresh durum will only take 3-4 minutes to cook. 5. Once the sauce is bubbling reduce the heat to half. Taste sauce for salt / pepper / chilli and adjust as desired. Reduce heat to minimum and add chopped parsley. You can also add another drizzle of olive oil at this stage if you like. 6. Check your pasta - if its not ready it will be close. When ready, drain the pasta. At this stage you can either mix the pasta and the prawns in the pan, or bring both to table separately and serve.
