24.01.2022 My parsley bush has gone out of control!!! My husband planted it and said one day... feel free to use for cooking maybe? It’s getting big I never liked it to be honest with you, and I never buy it. To me it’s a non event kind of herb. I mentioned it to a friend of mine and she suggested to make pesto with it. Well... now we’re talking!! ... I used just a small part of the plant and got 4 ramekins of goodness out of it. And seriously: I DID NOT expect it would taste THAT GOOD!! I used basic pesto recipe, jazzed it up with few extras I had and the result was truly AMAZING!!! So fresh, zingy, just plain delicious!! Parsley went from meh to wow!! And the best thing- so quick and easy to make!! Great as a dip, spread or a flavour base to quickly add to your cooking if you want to freeze in ice cubes. 22.01.2022 One of the most mouth watering pork belly recipes I have EVER eaten! Being in full lockdown means more time for online activities, such as searching for some new recipe ideas!! I saw "Singapore Coffee Ribs" and got intrigued. I love pork, LOVE Singaporean cuisine, and Coffee is life for me. So thought to give it a go! I looked at few recipes, added couple of my own ingredients and am now proud to present it to you! I changed spare ribs to pork belly rashers simply due to cost.... It's same thing really, but ribs were 30% more expensive. I did have to cut skin off the rashers, but still was much better value. So you can use either. Just be careful of small bones in spare ribs when you eat it. It's so perfectly sticky, glossy, sweet, salty and slightly bitter from coffee, it makes a perfect hearty dinner on the freezing day. And the best thing - unlike some Asian dishes made from scratch that require a TON of ingredients, this one does not! Most of you already would have most of it the pantry. 19.01.2022 Thought will share the dough recipe for gluten free Pelmeni (Dumplings) that I managed this weekend. You can use use this dough recipe for ravioli, empanadas etc. I always wanted to make GF dumplings. But didn’t know how! This week randomly I decided to do a research and give it a go. ... And it was a SUCCESS!! Pictured are pan fried ones. I used Asian filling for something different but hey, it worked!! They survived boiling and then frying!! Taste wise - both me and hubby loved it!! Slightly earthier taste, but it was a positive, it added an extra layer to the dish. So: I also tried the recipe method from online and then mine with variation in method and ingredients. Guess what? Mine wins by a mile!!!! You will need: 3 eggs 2 tsp xanthan gum 1 glass of milk 2cups of Gluten Free Flour.plus more if you need Salt . I used the Free From Gluten plain flour from Woolworths in their heathfood aisle, or Aldi have one as well. Xanthan gum is a binding agent that works instead of gluten. Available at all supermarkets at health food aisle as they say, and you use more eggs to bind it up than usual. Method: The method I saw everywhere online was mixing wet ingredients into dry ones. No milk in it. Similar to regular pasta recipe. I tried it: it was not great!! Very dry and short and just horrible to handle. So I did a batch using MY dough method- adding dry ingredients into wet ingredients and adding milk to eggs: Mix eggs, milk, salt. And start adding very gradually sifted gf flour mixed with the gum thing. Once starts sticking, move onto the bench to start kneading very gently adding bit by bit flour as you need it. I found the dough was pretty strong and fragile at the same time. But I managed 30 dumplings, boiled and pan fried and not a single one broke!!!!! We loved it! It’s a bit more work and takes a bit more care, but if you are craving your dumplings or ravioli but are celiac now - you might give it a go!! Enjoy, and let me know how you go if you make it!!

06.01.2022 Product review just in time for Easter! Smoked Eggs, Baby!!!! If you live in Victoria, you are in luck, as you can get your hands on this amazing product from The Smoked Egg Company. They are Raw Eggs, cold smoked and they are absolutely relish!! ... Fry them, poach them, boil them! Omelette, creme brûlée, hollandaise, mayo - are just the start of the ideas. And I have tried most of those myself (making creme brûlée tonight) and can report that the taste and smell is incredible! So my family is getting them for Easter as well instead of Chocolate Eggs!
