20.01.2022 It's FRIDAY y'all... calls for a treat! A glass of vino and cheese board - YES PLEASE!!! Personally, I like Red. White wine and I don't mix well (just ask my mother). #whitegirlwasted... So I thought we would do a NEW ZEALAND EXPERIENCE - Afterall they have some incredible wines. I firmly believe, it is important to drink and eat what you love and what tastes good to you. Many the task of wine and cheese matching gets way too complicated. Don't worry, I got you! There are many different types of wines that can be paired with cheese so thought I'd share some basics: White wines match best with soft cheeses and stronger flavours. Red wines match best with hard cheeses and milder flavours. Fruity and sweet white wines (not dry) and dessert wines work best with a wider range of cheeses. The more ‘smelly’ the cheese you choose, the sweeter the wine should be. If you always go for the stinkiest of cheeses, pick a big wine to back it up. Try a Cabernet or a Bordeaux blend. Dessert wines are a great choice if you like blue-veined cheeses. In fact, an incredible combination to try is blue cheese, honeycomb and a luscious dessert wine. Spectacular, trust me (and I don't even like blue cheese). Wine and cheese matching does take some thought but doesn’t have to be complicated. Remember there is no rule book. 18.01.2022 Let's head back to FRANCE for dessert ... Crème brûlée - who doesn't love CREME BRULEE!!!?? Also known as burnt cream, it is a dessert consisting of a rich custard base topped with a texturally contrasting layer of hardened caramelized sugar. It is normally served slightly chilled; the heat from the caramelizing process tends to warm the custard producing a cool centre. The custard base is traditionally flavoured with vanilla in French cuisine or with cinnamon and sometimes... garnished with fruit. YUM YUM AND YUM!!! ENJOY!! M.
11.01.2022 GREEK FOOD - OMG Where do I even start!!??? After spending 10 days in Greece, I think this was the first holiday I ate ridiculously and LOST WEIGHT, so fresh, so light and A-MAZING!!!! Greece has so many amazing Cuisines, Greek Salad, Tzatiki, Olives (if you are a olive lover, you will be in heaven, paired with cheese and wine ), Grilled meat, fresh fish, feta cheese... OMG I could go on!!!... But my fav dish, which has a combo of nearly all of the above is the Greek SOUVLAKI. The Souvlaki, is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer (similar to a kebab). It is usually eaten straight off the skewer while still hot. It can be served with pita bread, fried potatoes, lemon, and sauces, but the souvlaki itself is eaten on its own, with the side dishes eaten subsequently. The meat usually used in Greece and Cyprus is pork, although chicken, beef, and lamb may also be used. In other countries (and for tourists), souvlaki may be made with meats such as lamb, beef, chicken, and sometimes fish. Accompanied with a fresh Greek Salad with feta and olives - WINNING!!!! Yum. 02.01.2022 Kon'nichiwa - Let's hit up JAPAN... When I was in Hiroshima last year we were wined and dined and taken for "Japanese Pancakes" - Okonomiyaki. Okonomiyaki (pronounced - o-konomi-yaki) is a Japanese savory pancake containing a variety of ingredients in a wheat-flour-based batter.... A simpler version of okonomiyaki, made with readily available ingredients, became popular in Japan during World War II when there was a short supply of rice. The wheat pancake was nutritious, filling, and inexpensive and was often served as a snack to children. The name is derived from the word okonomi, meaning "how you like" or "what you like", and yaki meaning "cooked" (usually fried). Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan, the layers are typically batter, cabbage, pork, and optional items such as squid, octopus, and cheese. Noodles are also used as a topping with fried egg and a generous amount of okonomiyaki sauce. Super easy and filling - YUM!!
