22.01.2022 Winter Snow pea, Fennel and Asparagus Risotto Ingredients 4 tbsp olive oil + 2 tbsp Butter 2 brown onions finely chopped... 3 crushed garlic 375gm Arborio rice 1 L vegetable stock, simmering 1 fennel finely shaved 3 bunches asparagus, chopped 150gm snow peas, chopped 2 cups chopped Italian parsley 1 cup parmesan cheese sea salt & white pepper pinch nutmeg Method Slowly heat up oil and butter, add onion and garlic, slowly saut for 5 to 7 minutes. Stir in rice until well coated. Stir in the first 200ml simmering stock, allow the rice to adsorb the stock, and then add another set of 200ml until all the stocks been added. Stir in fennel and asparagus, cover and allow then to steam until tender. Flavour up by adding parsley, cheese, salt, pepper and nutmeg, sprinkle with Parmesan Serves 6 to 8

18.01.2022 Cured Lime Salmon Ingredients 500g boneless super fresh salmon fillets, skin removed, chopped into 1cm pieces 4 limes, juiced... 1 small red chili, de-seeded and chopped finely A good handful of dill leaves, finely chopped Little sea salt Method Place the fish, limejuice and chili in a large bowl, toss for about 1 hour to marinate and cook the fish. Roll fish in finely chopped dill, season with a little sea salt. Serve into a wide dish, if you have some coconut milk, drizzle it over the top, scatter with some coriander leaves and serve on its own or with some fresh crusty bread

15.01.2022 Pick of the Week - Imported Cherries. Incredibly delicious Cherries are available this week at our wholesale markets. Cherries are best stored wrapped in plastic in the refrigerator and rinsed with cold water just before eating. Always look for a deep dark coloured skin, which is firm to touch and free of blemishes. Juicy cherries make a marvellous addition to any sweet recipe and make a wonderful garnish!
