24.01.2022 My latest creation: vegan, sugar free delicious and nutritious apple cinnamon muffin One of my favourite things to do is to create yumminess packed with the most nutritious ingredients possible. Here are some of my favourite swaps: White flour whole grain flour. Eggs flax meal. Sugar date paste. Butter flax oil. I also like to add nut meal or nut butter for a rich taste and dried fruit for sweetness. 23.01.2022 Mmmhhh home-made vegan chocolate pudding. It’s so easy and absolutely delicious paired with raspberries, raw coco nips and coconut whip. Take about 1 cup of plant milk + 1/4 cup of dark chocolate + cinnamon + vanilla essence and a tbsp of maple syrup. Heat all ingredients whilst stirring. Then add 1 tsp of arrowroot powder to a small cup and mix with 2 tbsp of water then pour the mixture into the hot coco mix. Stir well and let it simmer and thicken for a few mins. Then turn off heat and pour into desert glasses. 20.01.2022 This smokey vegan chilli with Cashew sour cream and guacamole on brown rice is the bomb . Start by making the brown rice: I use 1 cup of dried rice to 2 cups of water in a pan. Let it cook until water disappears - usually around 20 minutes. . Chilli: Finely dice 1/2 red onion, chop up 1 large carrot, 1 red capsicum and a handful of broccoli florets. Remove kernels from 2 sweet corn cobs and crush 2 cloves of garlic. ... Drain and rinse a can of kidney beans or even better soak 1/2 cup of dried beans the night before and cook for 1-2 hours until soft. Add 1/4 cup of water to a pan and cook the onions for 2-3 minutes, then add all the other vegetables and add 1/2 cup of water, add a lid and let it simmer for 8 minutes until veggies are soft. Add a jar of tomato purée, salt, pepper, 1 tsp smokey paprika, 1/2 tsp of cumin and 1 tsp of liquid smoke. Stir and let it simmer for a few more minutes. . 15.01.2022 Portobello mushroom steaks - no need to eat a piece of cow if you want that delicious smokey, charcoal flavour. Marinate mushrooms in a marinade made from olive oil, soy sauce, onion and garlic powder, liquid smoke, lime juice and smokey paprika. Then fry them on high heat (15 min or so) and press them down to release the water in the mushrooms (I used another pan). 13.01.2022 There’s plenty of iron-rich plant foods but a little bit of planning is required to make sure to add adequate amounts on a daily basis (especially as a woman in child-bearing age). I’m a huge lentil fan as they are so versatile (think curry, dal, bolognaise sauce, patties...) and come with a good amount of iron plus other wonderful nutrients. 12.01.2022 I’m by no means a chapati expert but I love making them to go with a warming dhal. I use wholewheat flour, a splash of olive oil and water and knead it into a soft dough. Then I separate the dough into equally sized balls, roll them out on a floured surface and dry fry in a pan. I can't tell you how excited I get to collect all our food scrubs, put them in our compost tumbler, see our general waste shrink to half in size, and after 3 months get beautiful, rich soil that I can sprinkle all over our garden. 11.01.2022 Tofu Pad Thai - crowd pleaser and super quick and easy!! . . Ingredients: .... 1 pack brown rice noodles 1 pack of marinated tofu 1 tbsp of avocado oil (or other cooking oil) half onion cut into long strips 1 carrot 1 red pepper 1/2 cup of halved green beans 1 bunch of chopped broccolini 1/2 cup of raw peanuts fresh coriander leaves . Sauce 1 tsp of minced garlic 1 tsp of minced garlic 3 tbsp of maple syrup 3 tsp of tamarind puree (available at Harris Farm) 1 tbsp of vegan fish sauce (optional) 4 tbsp of soy sauce 1 tbsp of lime juice 2 tbsp of peanut butter . . Instructions: . Boil noodles of your choice according to package instructions. We like brown rice or black rice Thai noodles. . Prepare the sauce by mixing the tamarind puree, grated garlic and ginger, maple syrup, lime juice, vegan fish sauce, soy sauce and peanut butter. I use a Nutribullet for this. Set aside. . In a wok stir fry your veggies with a table spoon of oil (we like avocado oil) at high heat until their are starting to soften. Keep them crisp and do not overcook them. . Add the tofu pieces and keep tossing veg/tofu mix for a minute. . Turn down heat. Add the noodles and the sauce and mix well. . Serve in bowls and sprinkle some chopped peanuts and/or coriander leaves and/or add a dash of Siracha sauce. Done! Less than a third of all plastic waste that you throw into the yellow bin actually gets recycled. The rest ends up in landfill where it sits for around 1000 years before it breaks down. 04.01.2022 Yummie plant-based bean burgers ready to go in the oven. Here’s what I used to make them: 1 can of kidney beans, 1/2 cup of dry quinoa cooked, 1/2 cup of oats, 1/2 cup of pecan nuts (chopped), 1 tbsp of tahini, 1 tbs of tomato paste, 1/4 cup of chopped basil, 1 tbs smoky paprika, 1 garlic (chopped), soy sauce to taste. I pulsed all ingredients in my food processor a few times but kept a lot of the texture. Now they are ready to bake in the oven for about 20-30 mins at 200C. 04.01.2022 Pizza Night! I love making my own pizza base as it’s super easy and yum. Then throw all kinds of veggies on it, whatever we are in the mood for, finished off with delicious cheesy cashew sauce and a sprinkle of vegan cheese. . Base: 2 cups of wholewheat flour... 1 tbsp of dried yeast (check your yeast product for optimal amount) a splash of olive oil warm water . Mix all dry ingredients then add olive oil and add a bit of water at a time. Knead it well and add just enough water to make a smooth dough. Let it rise in a warm place for 30-60mins. Once it’s risen roll it out and add toppings of your choice. Bake for 20-30mins at 200C. Cheesy Cashew sauce: 1/2 cup of cashews 1/4 cup of nutritional yeast 1 tbsp of lemon juice 1/2 tsp of mustard pinch of paprika powder 1/2 tsp of onion powder 1/2 tsp of garlic powder salt and pepper . Add cashews to a high speed blender (Nutribullet) and add just enough water to cover them. Let them soak for 10mins then add the other ingredients and blend well. Add more water if needed to get a slightly runny sauce. Here’s what you need to know about tempeh: 1. It’s made from fermented soy beans and originated in Indonesia 2. It’s high in fibre and a good source of iron and protein 3. No need to cook it through like you would with meat. It’s edible straight from the pack but some prefer to steam it to remove its slightly bitter taste.
