19.01.2022 For many years we've been told that butter was evil and to cut it out from our diets and replace it with margarine. At SFL we had also avoided butter, but in t...he last year we've re-introduced and re-educated clients to not be afraid of butter but rather embrace its benefits. We regularly use various oils for cooking, butter is on the SFL list of approved items to use.....NOT MARGARINE! Now food marketing is extremely powerful in sending messages about health. Margarine is pure example of this, claiming its heart healthy benefits. By looking a the comparisons of both ingredients, which one would you choose? Butter and margarine serve the same purpose. They are used for cooking, baking and as spreads. Butter has been a dietary staple for centuries. It is made by churning the fatty portion of cow’s milk until it turns into the final product butter. That’s it. Margarine is totally different. It is a highly processed food that was invented to replace butter. The primary ingredient is vegetable oil (soybean oil, safflower oil) along with emulsifiers, colorants and various artificial ingredients. Vegetable oil is liquid at room temperature. This is why margarine is often hydrogenated, which gives it a harder consistency and extends shelf life. Hydrogenation also turns some of the vegetable oils into trans fats. To remedy this problem, the vegetable oils are subjected to a hydrogenation process. This involves exposing the oils to high heat, high pressure, hydrogen gas and a metal catalyst. Gross.
