23.01.2022 Decaf development alert! Our decaf has had a makeover and is now even more delicious. It's the same steller La Serranía from the Pitalito region of Huila, however after a few weeks of tweaking and experimenting we have settled on a new roast profile. The result is a silky sweet choc bomb, that we have been drinking here in the arvo's as espresso and as milky's, putting it through it's paces and making sure it is up to scratch. It's bloody good!... The new brew recipe for our decaf is: 21g of coffee 36-40g water (black) 40-44g water (white) The smaller brew ratio (coffee:water) is the result of a slight increase in development time (time spent in the roasting machine!). We have found this ratio is more user friendly and produces consistent, delicious shots within our target time range (22-28 seconds). Colombia's coffee industry is extremely well established, and the focus the FNC (Colombia's grower's association) has placed on high-quality washed coffees over the past couple of decades has resulted in a rising swell of passionate young producers. Their boutique farms allow them to experiment and implement new technologies, methods and processes. The result has been a steady increase in quality and variety, especial...ly over the last decade. That said though, it is still incredibly hard work to produce such high-quality coffee, and you have to be passionate and committed. Through our 'This is Colombia' campaign we have seen a constant theme, that these producers are young, dedicated and that the whole family is involved and invested in the success of their farms. It is wonderful to be able to support them by purchasing and showcasing their hard work, whilst also learning a little more about what it is like to be a specialty coffee grower in Colombia right now. 09.01.2022 Why Colombia? Passionate Producers... We have worked with Luis Edier (pictured) through our import partner, Caravela, for three consecutive harvests, going back to 2017. Luis is a young, passionate coffee producer who is following a family tradition whilst looking to the future to provide a better life for his family and community. 04.01.2022 REDUCE, REUSE, RECYCLE! Every little bit counts when it comes to minimising the impact we have on the environment, so lets talk buckets. Well over half our wholesale accounts now use our recyclable plastic buckets, they're tough little buggers that can easily handle up to 150 deliveries. We pick up the empties each week, give them a good clean, and they are ready to go again. It requires a lot of work but each bucket in circulation saves on average six hundred 1kg bags ...from going into landfill or to the recycling plant each year. That's a lot of bags!
