25.01.2022 A lot of clients ask me just how I brew, so I thought I might just do a little video. It is clearly not the whole day but just some highlights...here I present The Mash. When the video starts the salts CaSO4 and CaCl have already been added and the liquid to grain ratio is about 2.8:1, I am using a RIMS system. This ratio will give a good buffer for my precious enzymes and an easy recirculation



25.01.2022 I have a limited qty of these wonderfull gadgets...as you can see..hop on the website and look for wow. ... High grade engineering plastic bodies these devices screw onto a standard PET bottle and allow you to carbonate your beer or just top up carbonation if say poured from a keg. Whats more the body will accept both gas and liquid disconnects....to clean your lines fill a bottle with cleanser...gas the bottle up then connect your beer line...

22.01.2022 The wonderful and increasing number of craft breweries is intertwined with (home) brewers who are not so much interested in making $0.30 longnecks than being stimulated and enthused and very much wishing to make their own beers in the style of craft breweries. There is absolutely no doubt that all in one wort producers such as Braumeister, Robobrew, Guten and Brewzilla are at th vanguard of (home) brewing. 21.01.2022 This has to be the craziest deal ever !! Aimed specifically at new brewers but available to all...here is an intro all grain brew kit: https://mashematics.net/wp/shop/ Now depending who is supplying in Canberra the value of the hops could be from $60 to $100, the grain from $80 to $150 and the yeast from $25 to $30. Plus the mill at least $120. So why $222...its a bit of come on in price, its a bit of Mashematics support of brewing , and here is a trick, if you are a member of Canberra Brewers its even less less expensive...(now that is a loss leader)

19.01.2022 Trident was developed for those seeking a hop forward punch to the nose fruity, citrus, tropical, passion fruit blend to fit any beer style. Trident is a specialized blend with a much wider range of aroma and flavor characteristics than any single hop variety could generate on its own. Although, Trident is perfectly balanced as is, it can also be used with other varieties to build an even more unique, and potent flavor profile. Myself, I would give it a go as is first..... It may be a blend but it is anything but cheap, almost breaching the (remember Mashematics sell in 138g vac packed packs) the $11 per 100g barrier!!

17.01.2022 Mashematics once again make the point that there is no shortage of ingredients, unless it is seasonal which is non COVID 19 related. It is indeed quite the opposite, with on premise breweries that only sell through their own bar (and there are a lot of them) not buying a surplus of ingredients is created. Indeed I was most distressed this afternoon when a new client told me (and this is word of mouth) that certain businesses were restricting their sales.. you know (in an ima...gined conversation) "I like a 25kg bag of base grain over there, $70 is it? "No sir, due to the shortage we are restricting grain sales to 10kg max" "OK that will get me through to next week" " That will $55 then for the 10 bags but you come back tomorrow and buy another 10, better be quick" I had a tonne arrive a few weeks ago and at current rate may order another next week. It is just a case of room. The way to support both my suppliers and my clients is NOT to impose artificial restrictions. I apologise for my rave, it was born from a sense of disgust. Kurtz

15.01.2022 The fabulous made in Australia (the PET vessel at any rate) snub nosed fermentasaurus. A full pressure vessel but at a fraction the cost. You can even use them to transfer, say off the hop and trub mass to a dry hop vessel and then even to another dry hop vessel. Currently less than 30 in stock here in Wanniassa so get in.....

14.01.2022 New pack size, a combo of convenience and value, our 2kg vac packed grain packages. The grains are(of course) uncracked in 100 micron vac bags, no ziplock. But hey...starting at $5 (yes thats $2.50 a kilo) this is a brilliant price, just now only a couple of products are showing but the whole range of vailable malts will be poulated over the weekend. https://mashematics.net/wp/shop/



13.01.2022 Having to re-arrange the freezer, in the Calico bags are 44kg of packaged hops....need room for a whole lot ready to be packed soon !!!!

13.01.2022 Another tonne of malt arrives tomorrow. I was running low or even out of some base malts...disastrous I will now have in unopened 25kg bags of base sub-base and specialty over 1800kg and probably in packed bags of specialty 400kg. I think that is fair to say that no other brew shop in Canberra has this much malt, but it should be enough to tide over to early November...oh btw the attached image is from quite a few tonnes ago !!

11.01.2022 Running the wort off the grain to the boiler

11.01.2022 In malted barley grain plumpness is important (there are plenty of studies just google) to support this, at the most basic level you will get more starch and therefore greater efficiency from plumper grains but it goes further..much too much to cover on a FB post. This photo shows two rows of Ale malt..can you tell the difference? The bottom row is Gladfields Ale malt. It should be clear from this photo why you need to set your mill gap at 1.45mm if using Gladfield. For interest this batch had 80.5% screenings >2.8mm (pretty standard for Gladfields) and 17.9% 2.5-2.8mm

08.01.2022 I fully support the physical (social really is a bad descriptor) distancing policy. If you feel uncomfortable entering my shed with me in there (and for goodness sake even in ordinary times this could be a problem) I already have plans in place, based on plans that have been used for years for me-free pick ups (that me not free). I will place a small fridge outside the shed for yeast and hops or inside the shed if I can make room. On top of the fridge will be a spray bottle o...f 70% Ethanol. You know what to do. You can simply pop in and pick up, orders will not be segregated (and any way I do expect a large pick-up on this) so pick yours out. Notice is required for this and I will take full responsibility for the safety of the goods. I will be available personally at usual times (outside of working hours) Kurtz

07.01.2022 Increased range of dried yeast. Now I have always been a liquid yeast lover but the range of dried yeasts has increased dramatically over the years. 06.01.2022 Its that time of year for something fruity, sour , fizzy and quick with not a huge complexity. This year though you can can forget kettle souring, which yees does offer a degree of complexity, and danger, or the more controllable Lactobacillus Plantarum or the lazy and zero dimensional lactic acid addition you can do it with one pack wonder....https://mashematics.net/wp/shop/ Of course if you wish to pursue a more complex (and much slower sour programme) wait till my next post (which will not be 2 months time.....)
