24.01.2022 Red wine barrels and whisky - how do they work together? One thing we have discovered through our R&D efforts is that the oak volatiles are over 4 times higher compared to an ex-bourbon barrel, up to 8 times higher compared to an old fortified barrel. So while considered neutral by the wine industry, when filled with spirit, they are very active. Most distilleries focus on what wine the barrels have held. What we see however is that the original Cooperage, oak sourcing, and b...arrel style is far more important than the wine that the barrel held. As an example, a Sylvain barrel that held Shiraz will be markedly different to a Seguin Moreau barrel that held the same Shiraz. Whereas a Sylvain barrel that held Shiraz will be very similar to a Sylvain barrel that held Cabernet. There is a lot more to consider with wine barrels too - how old they are, how they were treated post-emptying, issues with brettanomyces and VA, microbial load, toast and char levels... 17.01.2022 Beenleigh is Australias oldest operating distillery, and we have some of their very old barrels, smelling rich with flavour and history. Originally Heaven Hill bourbon barrels, these then held premium rum for over 20 years. They smell of rum and raisin ice cream, vanilla and 5-spice. Our research involves collaboration with leading Australian distilleries, and the science is independently validated by the Australian Wine Research Institute (AWRI). Furthermore, QIP helps develop intellectual property and products that help Australian distillers produce high quality spirits with greater consistency. One of the products generated from this R&D will be launched at the Australian Distillers Association conference next week in Kingscliff. Besides the colour difference, Bourbon X casks deliver significantly more vanilla, caramel, butterscotch and sweetness.
