04.01.2022 Want a delicious and healthy muffin recipe for the whole family. That is GLUTEN FREE, DAIRY FREE, REFINED SUGAR FREE. Fibre full and taste full! RECIPE BELOW: You're welcome ;) INGREDIENTS: 1 and 1/4 cups of Buckwheat flour 1/4 cup of coconut sugar... 2 teaspoons of baking powder 1 pinch of salt 4 eggs 2 medium sized bananas mashed 1/4 cup coconut oil melted 1 teaspoon of apple cider vinegar 1 cup of blueberries (or raspberries) A handful of chopped walnuts METHOD: Lightly beat eggs Add remaining wet ingredients and mix all wet ingredients plus eggs together Add dry ingredients together in a separate bowl then add wet ingredients into the dry ingredients stir to combine stir through nuts stir through berries Fill muffin cases 3/4 of the way bake at 160 degrees Celsius for 20 mins. cool on wire rack. enjoy!
