13.01.2022 Hey everyone and happy #fruitnerdfriday from Thanh, here with @mattscravat and we’re bringing you this week’s tip. Ugly Delicious Cucumbers! They might look ugly, but they are unbelievably crunchy! When the cucumbers are at the baby stage, all of the non-conforming ‘curly’ continental cucumbers in the greenhouses are picked first so the main crop will be straight.... The natural curl gives them their nickname ‘wild cucumbers’! The straight cucumbers then go through an intense growing period where they’re fed plenty of water to grow, that the baby wild cucumbers don’t get, making them the crunchiest cucumbers ever! Unfortunately, fruits and vegetables like these are often wasted at the farm level as most consumers don't want ugly looking fruit, so this is a callout to focus on what's in fruits and vegetables and not just how they look. I know Matt is a proud ambassador of @secondbiteorg working to minimise food waste like awkwardly shaped produce like these cucumbers. We all can do our part to reducing food waste, and it all starts with re-shaping our view to be unbiased toward ugly looking fruits and vegetables. I guess the cliché goes "don't just a book by its cover"! A piece of advice I give to anyone wanting to change their mindset on ugly fruit and vegetables and food waste is to try to grow your own food! You'll find the process nurturing and warming, but also difficult and challenging. It is through this difficulty of trying to produce food that you may find a greater appreciation for farmers and for your crop, whether perfect or ugly. #uglyfruit #secondbite #growyourown #foodwastewarriors

07.01.2022 I first met Fruit Nerd Thanh Truong on Plate of Origin and was blown away by his encyclopaedic knowledge of fruit and veg. So it seemed natural to invite him to take over my insta feed tomorrow so he can share some of this wisdom with you. In the pic he is delivering me a selection of tree-ripened new season mangoes for a comparison tasting!!!... Pic 2 is the green mango and shredded cucumber salad, with seared porterhouse, Vietnamese mint, common mint, coriander and dressing of fish sauce, lime juice and palm sugar, I made with some of Thanh's mangos.
