25.01.2022 What is so special about today, the 21st of July you ask??? It is INTERNATONAL LAMINGTON DAY There are a few stories of the origin of the lamington, but my fave is of a French chef accidentally dropping a sponge cake in chocolate sauce whilst preparing afternoon tea for the Governor of Queensland in 1896. Not wanting the govener to get sticky fingers, his Tahitian wife suggested rolling it in coconut!! 12.01.2022 Well what a weekend!! My first time to Marlo was exceptional, catering a dinner party with the brief of using as much local produce and suppliers as possible... And so we did!! Beginning with Lakes Entrance prawns, Bruthen Creek Free Range Pork Picnic Point Farm apples, lindenow greens, heirloom carrots & beetroots, Seasalt-sourdough breads, Snowy River Black Garlic, Forge Creek lamb and we cant forget to mention Forge Creek Free Range eggs for my meringues, combined with Joh...nsonville Farm delicious stone fruits... How lucky are we to have such great producers here in Eastgippsland!! All served with local wines from Lightfoot & Sons Wines & Tambo Wine and Sailors Grave Brewing beers!! 05.01.2022 Its been a while since Ive whipped up this guy In 2011 a mate Seb asked if Id come up with a Jaffle menu for his Australian themed Bad Frankie he was opening... after lots of experimenting and trial and error, we came up with a pretty spectacular menu with the star being the Lamington Jaffle. Chocolate sponge dipped in chocolate sauce, filled with jam and toasted in a the awesome Breville Australia jaffle iron, rolled in coconut!! Served with whipped cream it was pretty epic... so much so, Rachel Khoo did a segment on us on her Kitchen Notebook Melbourne series. Bad Frankie and the Lamington Jaffle are still going strong and I will definitely be heading there when they reopen!! Sooooo delicious #jaffle #australian

03.01.2022 TIPI WEDDING, stunning gardens & gorgeous weather!! We had the pleasure of catering a wedding over the weekend, that had the most beautiful setting with 3 GIANT TIPIs set naturally into the gardens, adorned with native wild flowers grown by the family, it was like as if it had always been there!! A big THANKS has to go out to my super crew for catering for 150 people out of our almost bush kitchen, even with the slight hiccup of our oven dying , we got there with everyone...s hard work.
