21.01.2022 Who likes the vibrant beauty of the Saffron Milk Caps? We foraged these in a local pine forest today and made my favourite mushroom pasta. I am no chef, but this is how I make them... lots of olive oil, 1 onion and 2 cloves of garlic, sauted together. Slice or dice up the mushrooms and fry with the onion mix until all the water has come out, you may need to add more oil. Add some toasted pine nuts and cook until the desire texture. Dish up on some pasta if you like, I prefer it with tiny pastas and not much. Salt to taste. Top with fresh parsley and parmasen cheese. YUM!! Would you like to see some Saffron Milk Caps at our next market.,.... 2nd May!!
