23.01.2022 Cooking dinner tonight and not sure what to have? Monica has provided us with another light heart healthy dinner we can serve up. Salmon Salad (serves 4) Ingredients ... 200g mixed salad greens 1 punnet of cherry tomatoes 1 red capsicum sliced 1 lebanese cucumber sliced red onion, sliced cup pitted Kalamata olives 100g Greek fetta cheese cup of olive oil 2 large lemons 2 garlic cloves chopped 20 fresh mint leaves 1 teaspoon dried oregano teaspoon paprika 4 salmon fillets Dried oregano and black pepper Instructions: Preheat oven to 200 degrees Season salmon with olive oil, pepper and oregano and place on a tray in the oven for 10 minutes Prepare lettuce, tomatoes, capsicum, cucumber and olives in a bowl In a blender mix olive oil, lemon juice, garlic, fresh mint, oregano and paprika to make the vinaigrette Pour half of vinaigrette over the salad, add crumbled fetta cheese Divide salad to serve into 4 bowls, top with salmon fillet and drizzle with remaining vinaigrette DID YOU KNOW?? *Salmon - Protects against heart disease by increasing levels of omega-3 fats, decreasing levels of omega-6 fats and lowering triglycerides (bad fats). *Olive oil : Olive oil consumption, specifically the extra-virgin variety, is associated with reduced risks of heart disease. Chunky Guacamole with veggie sticks (serves 6) Ingredients... 1 large tomato, diced finely 3 ripe avocadoes Juice of 1 lemon cup coriander leaves, chopped red onion, chopped teaspoon ground cumin Vegetable sticks capsicum, cucumber, carrot, green beans Instructions Scoop out avocado and mash in a bowl Add tomato, lemon juice, coriander, onion and cumin and mix all together Dip the veggie sticks in the guacamole and enjoy! Ingredients 2 cups low fat milk cup chia seeds... 2 punnets of strawberries, sliced 1 teaspoon of lemon juice 3 tablespoons of water Instructions Put milk and chia seeds in a jar in the fridge overnight Slice strawberries, put into a saucepan and add water and lemon juice Cook on a low heat for 20 minutes, stirring to make sure it doesn’t burn Serve cup of chia pudding in a bowl/cup, add strawberry sauce on top to taste DID YOU KNOW?? *Chia seeds - Are high in fiber and omega-3 fatty acids which are both important for our digestive health and are anti-inflammatory. *Strawberries - Are full of flavonoids, polyphenols and fiber.
