08.01.2022 My Meal Made is on a holiday until Feb 20 I’m in Thailand visiting my family and eating up a storm I’m hoping to bring back with me more inspiration, new menu, and more recipes since my Aunty who’s a personal chef and butler to a Moroccan princess is home too and brought with her a few rare Thai cookbooks for me to dive my nose in ... So far, I’m trying to get over my jet lag by eating fried chicken everyday...for breakfast. Cooked by my family’s cook who’s been with us for almost half a century. Her fried chicken is OUT OF THIS WORLD!! So simple, lightly marinated in soy overnight and fry to perfection. It’s crispy on the outside, juicy on the inside, not oily at all, and with just a tinge of soy flavour coming through but not too salty (so you can actually eat a whole plate ) Stay tuned for more food pics. I’m based in Bangkok but heading up to Chiang Mai tomorrow for a few days to eat my way around the city.

04.01.2022 This echoes how I think the present days might be like. People may have become too ‘literal’ when reading a recipe. Cooking is about tasting, feeling the texture, and experience. Everybody has to start somewhere. I remember making a really bad dish to impress a boy when I was 16. I learned from my mistake and never again over-boil rice vermicelli with too little water ... Maybe people should find themselves a surrogate grandma to learn to cook from (bonus if your actual grandma is a great cook and still alive!). Someone to show you how things should smell, feel, taste etc. Well, for Thai food, you can book my cooking class and I can be your surrogate grandma
