23.01.2022 Next weeks bacon kabana class is now filled. If you wanted to come but didn't email me then you missed out. I am sorry about that however from experience I have had people say on this page that they want to book a space but then fail to email. I cannot hold a spot for people who say they want a spot but don't email.



22.01.2022 Just a reminder that our first class for 2020 is the bacon kabanna class on the 14th and 16th of Jan. It is full so we have also advertised one for February. We will send out notifications to those coming to the class next week.

21.01.2022 Outstanding VOUCHERS Gidday All! Phil and Merc were hoping we could have done at least one Xmas ham class before Xmas however due to you know what we cannot. It is doubtful we will get back to any classes until Feb or March next year. We know there are quite a few people with vouchers out there which have no time limit on them. However money is tight and it is Xmas so if you want to cash in your voucher we are very happy for you to do so. Just pop into the shop with your vouc...her and we will give you its cash value. Cheers :) Oh and have a great Xmas and New Year!!

18.01.2022 January Classes We will be holding two classes in January. A Bacon and Kabana class 14th and 16th (this is a two night class) cost $220.00 per person. This class includes butchery, curing bacon and making kabana.... Australia Day Lamb class 23rd (this is a one night class) cost $250.00. Lamb is expensive at the moment but Phil and Merc like to do the traditional Aussie day lamb class. We will be boning out legs and prepping them for the bbq. We will also prepare lamb ribs and make a lot of special snags - Bush Tomato and Ale Lamb sausages. We have vouchers if you would like to buy one of these classes as a Xmas present for someone you love! 17.01.2022 Wow, less than 24 hours since I posted about the bacon kabana class in January and it is sold out. Will look at doing one first week of Feb so if you want in on that one email [email protected] to pencil in a spot. Lamb class is 3/4 full so if you are thinking about it stop thinking and book now!!

15.01.2022 Gidday All - it's me here - thought I would give you an update on classes. The doctor told me to take it easy for at least a month which over the last week and a half I have kind of done, kinda, well sorta, I thought I was not doing much but there in lay the problem - I am supposed to be doing nothing not 'not much'. Needless to say I hit the 'i feel like crap wall' and ended up back in bed. Based on this revelation Phil and I are hoping to do the postponed Kabana Bacon clas...ses mid February - all things going well. Keep an eye out here. I will email everyone who were confirmed for the classes with new date in next week. Also great news re me getting an Order of Australia! Bad news is I will have to charge double for my classes!! Just kidding :) Everything stays the same and no Andy you do not have to call me Sir Paul! Look forward to getting back on my feet and into the butcher shop with you all soon. 11.01.2022 Gidday all, Phil and I had a chat today and whilst we are frustrated that we are unable to do any classes for the foreseeable future we are also aware we have a fair few gift vouchers out and about. The gift vouchers do not have a use by date so they remain valid until the person who was gifted the card uses it. However we also know with the current climate some people are hurting. So if you are hurting financially we are happy for you to come and see us and cash the gift ca...rd in to the value of the card. Give the shop a call if you are wanting to take up this offer and let Phil know. 11.01.2022 It has been a while! I've been busy promoting my latest movie - 'Promised' and Phil has been busy with working hard and having holidays but we are back!! Bacon kabana class next week. This class is over two nights - night one Tuesday 12th, night two Thursday 14th 6.30 at the shop - Somerville Village Meats.... Learn the art of making your very own bacon and your own Kabana from boning out the leg and loins to mincing, stuffing and smoking. At the end of the second night take home your very own 2.5 kilo bacon and about 18 sticks of kabana. We might even make our latest kabana - the mighty Tex Mex!! $220 per person Preference will be given to those with fathers day vouchers. Email: [email protected] to secure a spot.

10.01.2022 Announcement! Due to Paul having a bout of pneumonia and only getting out of hospital yesterday he is not quite up to doing any classes at the moment. So it is with sorrow that we are postponing this weeks lamb class. We are hoping to do the bacon kabana and the lamb classes in February. Please keep an eye here for further announcements. Sorry for any inconvenience. Cheers

10.01.2022 Success First salami opened and no one is dead

09.01.2022 I cooked my porchetta last night. Bought it home from the class thursday night and put it in the fridge on a rack sitting on a tray. Saturday:Turned oven to 230 pulled the pork out of the fridge, cut it in half then gave it an oil and a generous salting then when oven was hot put it in. Cooked for 1/2 hour at 230 degree c then turned down to 150 degrees c and cooked for 1 1/4 hours. Turned tray around and turned oven to 230 c and cooked for another 10 or so minutes until I was happy with the crackle. Took out of oven and rested whilst I made the orange sauce.

06.01.2022 This years Xmas ham. Bought from Phil and brined by the boys at the shop. Smoked on my weber for 6.15 hours with apple wood.

He doesn't - he has a small cough and a slight temp but being we are handling food etc you dont want anyone around said food if they are unwell.... 01.01.2022 We have been playing around with a new Kabana! It is a pork mango satay kabana. It is still in development as we are tweaking the flavour but we do have a couple of sticks at the shop so if you want to taste it just ask. Be aware the texture is all wrong as we got our liquid ratio's a little bit out of whack. Still free to try :)
