25.01.2022 This week we have had the pleasure of having Jeremy with us from Crows Nest State School on work experience. Jeremy has been really helpful and we congratulate him for demonstrating initiative and maturity. Here he is crimping pie edges. Coincidentally, Jeremy is from Plainby and the pies are our Plainby Dorper Lamb Pies. Local. Local. Local. Thanks for your good work and great attitude this week Jeremy.

24.01.2022 Entertaining this weekend? Here is a recipe that is sure to be a hit with all the guests. STICKY SHORT RIBS WITH WATERMELON AND HERB SALAD. SERVES 4 INGREDIENTS... 1kg beef short ribs Braising stock: 2 litre beef stock cup soy sauce 4 bay leaves 3 cloves garlic 1 tsp pepper 1 cup orange juice cup brown sugar Short rib dusting and glaze: 1 cup rice flour, dusting cup Sriracha chilli sauce cup honey 2 tbsp apple cider vinegar Salad: 1 iceberg lettuce 1 lime, cut into wedges seedless watermelon, cubed cup flat-leaf parsley, loosely packed METHOD: Place all the braising stock ingredients into a pot and bring to the boil. Place the beef short ribs into the pot and leave on a gentle simmer for 2 hours. Make sure the beef is always covered in liquid and if it reduces top up with water. Once the short ribs are tender and the bones slide out with ease, remove from the pot and rest for 10 mins. Slice the beef into 1/2 cm strips and dust in rice flour. Mix the sriracha, honey and apple cider vinegar together and brush onto both sides of the short rib strips. Place the short rib strips onto a lined baking tray and cook at 200C for 8 mins until caramelised. Arrange the iceberg lettuce, lime, watermelon and parsley on a large platter. Place the short rib over the salad and dress with the remainder of the sriracha dressing. TIPS For an alternative cut, try other slow cooking beef cuts like brisket and blade. The dusted and glazed beef can also be pan fried in vegetable oil for a crispy texture. If the short rib is refrigerated overnight after cooking to stiffen, it allows you to slice the meat with consistency and is easier to handle. https://www.australianbeef.com.au//sticky-short-ribs-with/

18.01.2022 Today's special is MEATLOAF at $7 each (Limit 2/purchase while stocks last). Try serving with a potato & beetroot mash and seasoned steamed spinach. Ingredients: 250g ready to eat fresh beetroot, 400g mashing potatoes 4 tbs crème Fraiche... 1 lemon Directions: 1. Peel the potatoes and cut each into 8. Put them into a large pan of salted water and bring to a boil. Simmer for 10 minutes until the potatoes are tender. 2. While the potatoes cook, chop the beetroot into quarters. 3. Once the potatoes are just tender, add the beetroot to the water and simmer for 2 minutes longer. Drain the water away and add the crème fraîche to the pan. Mash everything together well until you have a smooth pink mash. Season to taste. 4. These new trays are made from sugarcane, freezer-safe, microwave useable and COMPOSTABLE. You can even bring them back if you like and they will end up in a worm farm and then in the shop's vege garden. Every little bit helps.

Here is a Chicken Parmigiana with Prosciutto INGREDIENTS 3 tsp extra virgin olive oil 3 tomatoes, finely chopped... 1 garlic clove, crushed 1 tbsp fresh basil, finely chopped 4 slices prosciutto 4 (600g) Chicken breast schnitzels Olive oil spray 1/2 cup (60g) coarsely grated light mozzarella Mixed salad leaves, to serve Perino tomatoes, halved, to serve Sourdough bread, to serve Basil leaves, to serve METHOD: 1. Place oil, chopped tomato and garlic in a medium non-stick frying pan over high heat. Bring to the boil. Reduce heat to medium and simmer, stirring occasionally, for 7 mins or until tomato breaks down and sauce thickens. Stir in chopped basil. 2. Preheat oven to 220C. Line a baking tray with baking paper. Wrap 1 slice of prosciutto around each piece of chicken. Place on prepared tray and spray with oil. Bake for 15 mins. Top with tomato mixture and mozzarella. Bake for a further 10 mins or until chicken is cooked through and mozzarella is golden.
