24.01.2022 As a child we had a Mulberry tree and I liked to sit in the tree eating the delicious berries for hours. I used to come down with all my clothes stained from the berries . Much to my delight I now find myself with another Mulberry tree in my backyard! Simple pleasures and so good for me straight from my backyard. Organically grown as nature intended them to be.... Yummmmmmm Nutritional Value Of Mulberries: Mulberries are filled with nutrients that are important for our body, including iron, riboflavin, vitamin C, vitamin K, potassium, phosphorous, and calcium, as well as a significant amount of dietary fiber and a wide range of organic compounds, including phytonutrients, zeaxanthin, resveratrol, anthocyanins, lutein, and various polyphenolic compounds.

Each week I alternate the type of #organic berry that I use. These are delicious #glutenfree #wholefood muffins made from #noaddedsugar or sweeteners apart from the berries added. 21.01.2022 Happy Tuesday Everyone, I hope everyone is having a wonderful start to the week. Here is a beautiful platter of veggies that I made at Xmas time because I am happily a vegetable addict . PS: I also made the delicious Basil Vegan Pesto in the middle of the plate .... I love my veggies and I try to eat a rainbow of different colours with each meal. But why you may ask do I tell all my clients to "Eat a rainbow of colour"???... Let me try to explain below. (Fruit and vegetables fall into five different colour categories: red, purple/blue, orange, green and white/brown. Each colour carries its own set of unique disease fighting chemicals called phytochemicals. It is these phytochemicals that give fruits and vegetables their vibrant colour and of course some of their healthy properties). Whats in a colour? RED Red fruits and vegetables are coloured by a natural plant pigment called lycopene. Lycopene is a powerful antioxidant that can help reduce the risk of cancer and keep our heart healthy. PURPLE /BLUE The plant pigment anthocyanin is what gives blue/purple fruits and vegetables their distinctive colour. Anthocyanin also has antioxidant properties that protect cells from damage and can help reduce the risk of cancer, stroke and heart disease. ORANGE/YELLOW Carotenoids give this group their vibrant colour. A well-known carotenoid called Betacarotene is found in sweet potatoes, pumpkins and carrots. It is converted to vitamin A, which helps maintain healthy mucous membranes and healthy eyes. Another carotenoid called lutein is stored in the eye and has been found to prevent cataracts and age-related macular degeneration, which can lead to blindness. GREEN Green vegetables contain a range of phytochemicals including carotenoids, indoles and saponins, all of which have anti-cancer properties. Leafy greens such as spinach and broccoli are also excellent sources of folate. BROWN/WHITE White fruits and vegetables contain a range of health-promoting phytochemicals such as allicin (found in garlic) which is known for its antiviral and antibacterial properties. Some members of the white group, such as bananas and potatoes, are also a good source of potassium. And if you need some help transforming your diet and getting more colour into your life... 16.01.2022 How beautiful does my homemade Wholefoods Flaxseed Bread look? It tastes amazing & is super healthy!!! Flaxseeds are super high in good fats (omega 3) and loaded with fibre ... This bread contains only grounded up flaxseeds, eggs, lemon juice, water, salt and olive oil!!!! I know what I'm having for breakfast XxMegan Eve

14.01.2022 HAPPY MONDAY EVERYONE :) I'm back in Australia after being lucky enough to spend a few weeks over in Miami Florida while I attended the annual conference of the Institute of Integrated Nutrition (the school where I got my Health Coaching Certification). It was such an inspiring and informative event and was so wonderful to be around so much positive energy and like- minded individuals.... On day one I was sitting in the second row and was surrounded by 2500 other IIN students and graduates. It was so cool! On day 2 I had a front row seat to listen to Deepak Chopra talk (I so wanted to get up on stage and just hug him) and was also fortunate enough to get to sit in on an intimate Q & A session with Deepak and the School founder Joshua Rosenthal. I came away wanting to show more gratitude for my life and the opportunities I have and also with a very good reminder that "We as humans can do anything, but we can't do everything"............... So, now that the jet lag has subsided I'm super focused on completing some advanced training through IIN in Gut Health where I am learning about the digestive system, the absolutely fascinating GUT Microbiome (such a hot topic at the moment) and about the most common gut and digestive disturbances. I am going to be specialising my Health Coaching work in this area going forward so stay tuned I will share more on this soon. I've also shared a few photos from my exploring around Miami Florida and some food pictures that show even when I travel I love to cook my own food and had my apartment stocked up on yummy wholesome wholefoods while I was there. (PS: I also became quite addicted to purple sweet potato and spent a lot of my time hanging out in the US wholefoods stores). So simple so easy. -500g organic grass fed lamb mince -Heaps of fresh veggies (cabbage works super well) -Coconut Oil... -Tablespoon of Turmeric & Cumin -Black Pepper & Salt -2 cloves of garlic Add a big splash of un-hulled tahini to serve & if you eat dairy a few spoonfuls of plain natural organic yoghurt on top Loving my new neo flan non toxic cookware. The second picture shows a little fee range ham & goats cheese I added to my partners side of the pizza But my side is completely #vegan & #plantbased & delicious!!!
