20.01.2022 - Super easy recipe alert!! - Stuffed capsicums -... Onion Garlic Thyme Spices (Cumin, coriander) Pepper & salt Mushroom Cauliflower Capsicums - 1/2 C quinoa 1 Cup Veggie/chicken broth - Pine nuts (lightly toasted) - 1. Saute first 8 ingredients until soft. - 2. Bring stock to the boil and add quinoa. Cook for 5 minutes and then reduce heat to low for a further 10 minutes with the lid on. Add a little water if required. Remove from heat. - Cot the tops off the capsicums and stuff (Mix sauteed veggies with cooked quinoa) with cooked veggies and quinoa - #recipe #vegeterian
