24.01.2022 What crazy times we live in! With all that is happening, we have decided to put our courses on hold for now. This is to ensure a safe environment for all our students, staff and tenants working around us. For the time being, please support your local cafe, buy beans from your favourite roaster and take care of each other! The hospitality industry needs you right now. I know many of you on here are directly affected and now is the time to practice genuine hospitalit...y - take care of your loved ones, support one another and evaluate what really matters to you. Dont worry about us, we will be back better than ever once it is completely safe to open! 24.01.2022 For all you baristas out there... when was the last time you looked at your wastage levels? Lets start with milk. All good baristas should know how to steam just enough milk for most of your drinks (or various combinations of each). In general, specialty coffee baristas throw away around 10% of their milk purely because its an afterthought. For example, if you go through 50 litres a day, that equates to 5 litres of wastage, costing the business an average of $2500+ a year! ...Same can be applied to coffee wastage. How many times have you recklessly thrown out shots for the sake of quality? Each time we purge the grinder, it costs about 50c which easily adds up to thousands over the year. The pursuit of quality should never be an excuse to ignore sustainable practices. Times are getting tough in the coffee industry and we need to bring wastage back into the conversation. See more

Tamping // Distribution // Froth Level // Milk Texture // Milk Temperature // White Dots // Workflow // Cleanliness // Service We love teaching latte art, dialling in, palate development and filter coffee but they should always be built upon these basic skills. Never stop learning but never forget the importance of these core fundamentals for your customer.

20.01.2022 Meet Gal @frankthecoffeeman - some of you would have seen him around. He has been with us since February and we couldnt be happier to have him as part of the team. Over the last 7 years he has been a Head Barista, Manager, Roaster and Coffee Trainer, bringing a wealth of experience from around the world. Originally from Melbourne, Gal spent the last 2 years travelling overseas working at some of the top specialty coffee places including @boccacoffee in Amsterdam. H...e also ran coffee operations and roasting at @bubbascoffeephangan from 2018-2019. For those of you in Melbourne, he probably has made you a coffee at one of the many specialty coffee places our city has to offer. Most recently, he has been involved in the setup and training of @duxcoffeebar where this beautiful photo was taken. Check it out. You may still find him there once in awhile. 20.01.2022 Due to the new Stage 4 restrictions, well be wrapping things up for the next 6 weeks. Well be giving our training academy a deep clean and have it ready to go once we re-open. Online home barista sessions are still running and gift vouchers available for purchase. On a personal note, Ill be at home figuring out how to keep 3 kids alive and entertained. 19.01.2022 Happy weekend everyone! Were lucky to be drinking an extremely delicious, super rare coffee from the Jansen farm in Panama. This coffee is a green tip geisha that was naturally processed for an extended 119 hour ferment. Roasted beautifully from the team at @tinmancoffeeroasters , this coffee was meant to be used for the recent Brewers Cup competition that unfortunately had to be postponed due to COVID-19. Fortunate to have good mates who have been kind enough to share this coffee me! If you are looking for something exceptional to brew on filter, you can still find it on their website... Any other special coffees out there?

13.01.2022 Its so encouraging to see more people brewing good coffee at home! Weve been to quite a few homes lately and there are some beautiful (and epic) setups out there. Whether its espresso, filter or stovetop, make sure to grind fresh and regularly experiment to find the correct grind size. If you have a decent espresso setup at home and want to significantly improve your skills, get in touch! We do private, in home training and are confident in our ability to step up your coffee game.... with the right knowledge and training, anyone can make cafe quality coffee at home.

This course extensively develops all the fundamental skills of a specialty coffee barista and further applies them to a real life cafe environment. 12.01.2022 Who else has stepped up their coffee game at home? With all that is going on, now is the time to learn some new skills! If youre not too sure where to start, try an Aeropress - its easy, repeatable and makes a great coffee. However, there are so many options out there... the humble plunger, a delicate pourover or the classic stovetop. We like our coffee black but all these devices can be adjusted to suit milk if you prefer. Trust us, its not that hard and there are so many great resources online (especially now) to get you started. However if you have any questions, reach out to us in the comments section and we would love to help you out!

Weve made some slight adjustments, with reduced class sizes (to a maximum of 2 people) while keeping tighter hygiene and social distancing practices. 05.01.2022 Our Barista Apprenticeship program is back in full swing and we couldnt be more excited! This course really is one of the most unique and meaningful things that we do. Training up aspiring baristas and actually giving them the practical experience needed to get a job is incredibly satisfying and much needed for the specialty coffee industry. 02.01.2022 Nailing your follow through is crucial when pouring rosettas. Keep it thin, straight and make sure you dont follow through over the edge of the cup. How do you get there? Basically, LOTS of practice and repetition. However, the cheapest and most efficient way is to practice with water. This will help build muscle memory and control much faster, without wasting the coffee and milk.

01.01.2022 Takeaway cup sizes. Who would have thought this could be such a complicated and contentious issue in the coffee industry. Here we have a 6oz, 8oz and 12oz cup. For starters, why are we even using ounces in Australia? Thats another conversation... but the real issue is why we have different sizes for dine in and takeaway. Dine in cups are usually around 200ml while takeaways are often 250ml. This leads to inconsistency in the recipe and therefore the flavour of the coffee. Fo...r consumers, its the norm but for baristas and cafe owners, it can be quite complicated. Either we disappoint the customer with an inconsistent product or we end up spending more on the cost of goods. Personally, we like that there is a trend toward using 6oz (or 200ml) small takeaway cups but also acknowledge it will take some time to change consumer expectations.
