24.01.2022 Friday night dinner was lots of sauteed capsicum, snow peas , mushrooms and zucchini. An odd bunch, but thats what I had on hand. 10 mins in a frypan with a sprinkle of spices. Then cleared the centre of the pan to make way for two eggs. Served in a warm bowl, added a few drops of balsamic to the vegetables and a sprinkle of dukkah to the eggs. Its not pretty or insta- friendly. But it is totally delicious , easy and fast. Which is definitely more important! Lets start the weekend off right, with good food to lift the mood.

16.01.2022 Writing on a specialist subject takes extensive industry knowledge and experience, and Allan Campion has that in spades. He began writing about food, cooking and restaurants in the mid 1990s having worked as a chef in Australia, Ireland, England and Turkey. He started with newspaper and magazine articles documenting Melbournes incredible growth in food in The Age and The Herald Sun newspapers. This led to opportunities to write about travel with organisations such as Visit ...Victoria, recipe features for Gourmet Traveller Magazine, and a weekly column about Melbournes multi-ethnic food scene in The Sunday Age. 16.01.2022 When life gives you lemons... well we all know the saying. But this week life did. Well actually a friend did by delivering a bag of freshly-picked-from-the-tree lemons. So Ive been doubling down on lemon recipes ever since. Tonight it was an old classic recipe, Spaghetti with breadcrumbs, tuna, parsley and lemon. And I say an old classic as variations on this recipe have been appearing in my cookbooks as far back as 2002. The method is pretty simple, toasting roughly chop...ped breadcrumbs in hot olive oil and tossing it with tuna, lemon, parsley, parmesan and cooked spaghetti. Mix and its ready to eat. One adaption Id suggest is 100g of dried pasta is a big serve. You can easily get away with 75g per person. Parmesan is optional here, typically cheese is not served with seafood pastas. But somehow I really like it here. Enjoy! Allan Campion Spaghetti with breadcrumbs, tuna, parsley and lemon 400 g dried spaghetti Olive oil for cooking 175 g sourdough bread, chopped into coarse breadcrumbs Chopped zest and juice of 1 lemon 350 g tinned tuna, drained Salt and freshly ground black pepper 1/4 cup chopped parsley Parmigiano (parmaesan cheese), grated, optional Bring a large pot of water to a boil over a high heat. Add a good pinch of salt. Add pasta and stir until water has returned to the boil. Reduce heat, cover and cook pasta at a fast simmer for 8 minutes. Heat a large heavy-based frypan over a mediumhigh heat. Add a generous layer of oil, heat well, add breadcrumbs and cook for 45 minutes, stirring often until breadcrumbs are golden and crunchy. Remove from the heat. Drain the pasta and place back into the same saucepan. Add the toasted breadcrumbs, lemon zest and juice, tuna, salt and pepper and parsley. I was born in Dublin, Ireland and have fond memories of home baked soda bread (white or wholemeal) served with lots of butter. In 1988 I worked as a chef in Turkey and one of the daily food delights was warm from the oven pide bread delivered to the kitchen door. I can still taste those beautiful loaves in my mind.
