19.01.2022 Some of Colombia’s best coffees come from Nariño, including one of our current offerings the beautiful Las Murgas produced by Freddy Lopez. The combination of high altitudes, proximity to the equator, and the nutrient rich volcanic soil in the Andes means coffee flourishes here. However, the remoteness of the coffee farms, and their small sizes producers here typically own less than two hectares of land means it has been hard to access the coffee from this stunning regi...on. But this started to change in 2010, when the Colombian Cup of Excellence highlighted exceptional lots from Nariño! This encouraged local producers and brought them some well-deserved recognition. 16.01.2022 Lately we’ve been doing a lot of thinking and discussing about how MCM can best contribute to transparency in the coffee industry, in ways that are positive and constructive and support a sustainable future for coffee production. Our goal is to help move the industry forward, while avoiding unintended negative consequences along our supply chain. We don’t have all the answers yet, but in the short term we have committed to the transparency movement in the following ways: 1.... In the way we buy coffee, and through the information and insights we share with our producing partners. 2. By donating data to the Specialty Coffee Transaction Guide and advocating for its growth and distribution. 3. By supporting our roasting customers who are choosing to move to transparent pricing structures. 4. By remaining open to feedback, continued conversation and positive change! Overall, we are enthusiastic about how the specialty coffee community is evolving and maturing. There are so many great conversations taking place right now, and we’re keen to be part of them. 13.01.2022 At Finca Calahute in Guatemala, coffee is handled with a lot of care at every step of the process. Here, coffee cherries are hand-picked during harvest (DecemberApril) before being sorted, pulped, fermented, washed and dried on meticulously clean patios for seven to 12 days. During the drying process, the farm's employees perform a high level of quality control to ensure every bean is as exceptional as it can be! This lot of CALAHUTE is well balanced and has notes of caramel, milk chocolate and stone fruit. Get in touch if you’d like add it to your offer list!
11.01.2022 Among industry leaders, there is a growing movement to publish the FOB, Farmgate, or ‘Return to origin’ prices for either the consumer or industry to reference. While none of these figures are straightforward or comprehensive, sharing them is a good starting point for demystifying how coffee is traded. The challenge with sharing these prices and figures is that without context they are virtually meaningless. They do not inform the consumer about considerations like cost of p...roduction, the quality or quantity of coffee purchased or the intricacies of the supply chain, which can vary greatly from country to country, region to region and producer to producer. Given the urgency of the coffee crisis, we cannot wait until we have perfect figures to share, and so these figures do serve as an important stepping stone. 08.01.2022 La Ponderosa is a farm in Huehuetenango, Guatemala, owned by the Pérez family, who have been working in coffee for five generations. The farm is now managed by Mr Wilfrido and his son Mr Hernán. They are committed to producing the very best quality coffee possible, and this starts with farming sustainably, and looking after the people that work for them the team that grow, harvest and process the coffee! We think the results are evident in the cup. This coffee is transparent, and has notes of kumquat, nectarine, strawberry and Earl Grey. 07.01.2022 Colombia is a relatively new origin for MCM, but ever since we started working here, we’ve fallen in love with all of its flavours and the regional variations here. There are 20 coffee growing regions in Colombia, and we work in five of them, including Nariño, where the outstanding Las Murgas is produced by young and talented Freddy Lopez. Freddy’s farm, located in the village of Medina Espejo, is quite small not unusual for farms in this area. Despite owning a small farm, he does have a ‘beneficio’ (wet mill) on his property, which gives him far more scope for quality control! Las Murgas has a caramel body and notes of blackcurrant, red tea and walnut it’s delicious! If you’re curious about this coffee and would like to know more or request a sample, get in touch!
01.01.2022 We love visiting @primarycoffee_ in Potts Point every time we’re in Sydney. The team at Primary (under the leadership of owner Dan Kim, who's hard at work behind the Synesso here) put a lot of consideration into selecting the coffees they roast and retail just as they have with the design of the space itself. Primary currently have the excellent Aroresa from Sidamo, Ethiopia, on offer pop by soon to try it!
