Ingredients: 225g fresh pitted dates ... zest from 1 orange 250g organic dried apricots, chopped 150 g almond meal 1 teaspoon vanilla bean paste 1 tsp ground cinnamon tsp ground nutmeg tsp ground ginger Method: Combine all ingredients in a food processor. Process until mixture is combined. Spoon mixture into a large bowl and add 1 2 tablespoons orange juice then mix again. Divide puddings into 6 small puddings. Invert the pudding and remove the glad wrap. Repeat until all the puddings are formed. Store in the fridge for up to 2 weeks.

Try not to overindulge on too much fatty and processed food. Try and make healthier choices like some sort of protein with vegetables, salads and fruit. Try to minimise the high starchy foods as much as possible. Eg. potatoes, pasta, lasagne, rice. Eat these in moderation. Start you day with a he...althy breakfast such as a protein shake with berries or eggs with spinach and mushrooms. Try having 1 tablespoon of apple cider vinegar first thing in the morning. This helps with digestion. You can also try hot water with lemon juice first thing in the morning. This may relieve symptoms such as nausea, heartburn, bloating and belching which are common when you are over indulging. Increase your exercise, especially if you know you will be eating more food or worse food than normal. Go for an extra walk, or park your car further and walk. Just get out there and move! 17.01.2022 Grilled Chicken Salad 100 gms chicken breast 1/4 tsp garlic Dash of Sweet basil, thyme, onion powder... Dash of salt & pepper to taste Spinach In a small bowl mix garlic, basil, thyme and onion powder. Season both sides of chicken breast and grill (on George Foreman Grill) for 3-4 minutes (depending on thickness of chicken but do cook til done). While this is cooking prep rinse and dry spinach and place in bowl. Once chicken is done cut into cubes on plate. Scrape juice and cubes into bowel of spinach. The natural juice from the chicken should be enough to not need any dressing.

15.01.2022 Asian-Style Oven Baked Fish* Ingredient 1 (480g) whole fish cleaned and gutted but with head intact (we used Snapper) 4tbs olive oil... 120g sesame seeds 4cm piece ginger, cut into thin strips 2 long red chilli pods, seeds removed, cut into thin strips 75ml salt reduced soy sauce 1 1/2 tbsp apple cider vinegar lite salt and pepper 80g spring onions, sliced diagonally, to garnish Method Preheat oven to 220C Make 2 slashes in the thickest part of the fish flesh, brush a roasting pan with 2 tbsp of the oil and place fish in the pan, brush the flesh with remaining oil, season with lite salt and pepper and sprinkle with the sesame seeds. Bake for 60 minutes or until the fish are cooked through (the flesh will flake away easily when tested). If cooked cover with foil and rest the fish for 10 minutes. Combine the ginger, chilli, soy, vinegar and 2 tbsp of water in a pan. Cook over low heat until the ginger and chilli have started to soften. 05.01.2022 Pancakes with Berries and Maple Syrup Serves 2 Ingredients 100g almond flour... 1 tablespoon coconut flour 3 eggs 50ml water 75ml prune juice freshly grated nutmeg Olive oil spray 200g fresh berries 1 tablespoon grade B* or melted raw honey ** Method In a large mixing bowl, whisk flours, eggs and water until smooth batter. Whisk in prune juice and nutmeg and set aside for one to two minutes. Place non-stick fry pan over medium heat, allow to get hot (about 2-3 minutes). Spray pan with a little oil and add spoonful of batter (dont crowd pan, make one at a time). Let batter bubble a little, cook for a minute then flip and cook for 1-2 minutes on the reverse side. Turn onto plate and serve with fresh berries and drizzle maple syrup or honey.
