25.01.2022 Did you know that dried chilies are a fundamental ingredient in Mexican cooking? There are sooo many varieties, these are just a few of the most common ones. The key ingredient in our tacos Al Pastor (pork) is Guajillo, a dried chile ... There’s also a special way to use the dried Chile’s, it’s simple - but if you do it wrong you can end up with a bitter aftertaste. Have you used Dried chiles in your cooking?

It truly does bring us so much JOY to see everyone enjoying the gorgeous park, the kids running around playing, the sun setting, the tacos being delighted in - the community coming together When we first envisioned Mercado Juarez I saw a festival vibe in the street - people coming together and sharing simple pleasures, music, good food & each other - and EVERY Friday I see that happening! It truly is amazing and fills my heart with soo much GRATITUDE

12.01.2022 Did you know that all our corn chips and corn tortillas are made fresh for our Friday taco night in the same building. Mercado Juarez is the sister business to our first business @donacholita tortilleria - we always knew we wanted to share REAL Mexican with Aussies, so when the opportunity came up to open a taqueria we jumped at it! At @donacholita we use only the best ingredients - certified organic nixtamalized (activated) maize flour and filtered water for our tortillas. ...All our chips start as a tortilla and are hand cut and fried in certified non-gmo rice bran oil and seasoned with pink Himalayan salt. @donacholita chips & tortillas are sold all over Australia

This is our Quesadilla (Kay-sa-diya) a delicious mix of melted cheese and meat/veg of your choice. ... For those of you who are unfamiliar with the Quesadilla, the dish is a modest corn tortilla that is filled and grilled. A full quesadilla combines two whole tortillas with a filling in between a bit like a sandwich. Quesadillas are filled with cheese (but not always) and other savoury ingredients such as meat, spices and vegetables before they are grilled. My favourite is the Gringa - Al pastor (pork) & cheese

11.01.2022 Local potter @lou.ceramics has been working her magic and making us some beautiful pieces to sell at Mercado Juarez. These are all one off hand made, hand painted pieces that Lou makes in her studio just down the road in Brunswick Heads. Made from terracotta and inspired by the delightful pottery of Mexico - they have almost all not made it to the shelf (I have a slight pottery obsession and find it difficult to not take ALL of them home). ... When there was no certainty that it would become a reality, nothing seemed to be lining up and so we put the idea on the back burner. But it was always there somewhere in the back of our minds. ... We didn't ever give up on the idea. And every time there seemed to be something we could do to move it forward, no matter how small we did it. It took at least 2 years before things really started rolling and I guess when the timing was right everything just fell into place perfectly. 06.01.2022 Tonight’s special - chipotle SOPES topped with refried beans, salsa, crema, cotija and your choice of chorizo or nopales. Sopes are a fat tortilla - made with our chipotle masa and cooked on the grill. So tasty!

This pic is obvs in Mexico A tamale is a traditional Mesoamerican dish, made of masa, which is steamed in a corn husk (this week we’re using corn husk) or banana leaf. The wrapping can either be discarded prior to eating or used as a plate. Tamales can be filled with meats, cheeses, fruits, vegetables, chilies or any preparation according to taste. Ours will be pork, chicken, chile & cheese.

03.01.2022 The beginning of our Pollo en achiote a la parrilla - chicken in achiote that is char grilled. Another fave on Fridays menu - 3-7pm in beautiful Burringbar Achiote also known as Annatto is a popular natural food colouring used in Mexican cooking to add a yellow-orange hue to a variety of dishes. It comes from the seeds of the evergreen Achiote tree (Bixa Orellana). The rich red coloured seeds that grow inside the tree’s prickly, heart shaped seed pods are revealed when ...ripe. The achiote seeds are harvested, macerated and dried before being ground into a powder or made into a paste for use in the Mexican kitchen.
