Join us as our Mercure Chef Afrodita Manastirlic Zivkovic from Mercure Belgrade Excelsior, shows us how to make "Grenadier March", a traditional army dish, prepared as early as Napoelonean times. It is still a favourite with older generations. The star ingredients of this dish are potatoes and onions. Both very simple but so versatile ingredients that make every dish taste better and give it a homely feeling. INGEDIENTS for... 4 servings: 500gr flour 250ml lukewarm water 2 teaspoon salt 300gr onions 500gr potatoes 2 teaspoons ground sweet red pepper 1 teaspoon sugar oil PREPARATION: 1/ Peel and cut the potatoes in cubes, cook in salted water, leave aside until needed. 2/ Mix flour, 1 teaspoon of salt and water, knead until dough is even. Cover it and let it rest for 30 minutes. 3/ In the meantime, peel and cut the onions julienne, sprinkle them with salt and sugar and fry them in oil until they soften and then add the sweet ground pepper. Leave to rest aside. 4/ Boil salted water. Add ripped pieces of dough into the boiling water and cook until they start to swim on the surface. 5/ Once the dough is boiled, transfer onions into a bigger pot, add cooked dough, stir until everything is covered with the pepper-oil mix. Add potatoes and stir again. If needed, season to taste. Should you be in a hurry, you can replace the dough with pasta or gnocchi, which you cook according to usual instructions. Serve with mixed pickles, seasonal salad or green beans.
