24.01.2022 Unlike pork broth or chicken stock, did you know that fish stock only requires several hours of cooking? This week at Mezzanino we made a barramundi and snapper broth to use in our risotto and other seafood dishes - deliciously fragrant and delicate.

20.01.2022 There's a bit of confusion surrounding who in Italy first began cooking with squid ink. The Venetians claim it all started in their early days when banished to their eponymous Adriatic lagoon, with few foods with which they could cook. The Sicilians claim a much more ancient lineage - that they were using squid ink in the time of the Caesars. Whatever the origin, perhaps we can meet somewhere in the middle with a hearty Northern polenta cooked in squid ink, with tender octopus cooked in tomato.

18.01.2022 Polpette for all! Did you know that the well known spaghetti with meatballs is in fact an Italo-American creation? Italians have been eating meatballs (polpette) and pasta al ragù for a long time, but they weren't combined until the 20th century. Our chef cooks them perfectly in a tomato sugo, to be enjoyed as they should be with Parmesan and bread to mop up.
