25.01.2022 So nice to finally be able to have friends over and cook for them. Even if it may only be for 2 people it’s worth it. Great catching up with @mygreengardenau (Maria) and @ciavarellaciro . Salami night here we come!!! Made some dolmades with leaves from our grapevine, Briam, chicken schnitzel and of course had to have a Pavlova - lemon curd, with mango and mulberries (curtesy of @mygreengardenau ).

23.01.2022 Louvi - used to hate this with an absolute passion as a child. I prefer the fresh version as opposed to the dry black eyed beans, but fresh is not in season at the moment and it is only in season for a short time. 20.01.2022 A big baking day with my girl @izabellayena . We started off with carrot cake, them moved on to zucchini fritters and then apple and cinnamon scrolls. Happily talking and baking, someone forgot to add the apples in the cinnamon scrolls. 19.01.2022 Limoncello in the making. First time trying to make it and let’s hope (and pray) it works. With all the lemons on my tree, it’s obvious what I should be doing. As only the peel is used, I’ll be juicing the actual lemons for lemon curd (yum). 19.01.2022 Scottish shortbread - my husbands favourite. Haven’t baked for a few weeks whilst dealing with some desperately needed house maintenance, so decided to start again with something nice and simple. Haven’t made shortbread for some time and I’d forgotten how much nicer the home made one is compared to the store bought. 17.01.2022 Back to bread baking today. Two types of bread to keep everyone happy - sourdough and Cypriot koulouri (my fav). Sourdough just came out is the oven so haven’t tasted it yet - will have to wait till tomorrow morning, but the Cypriot style bread is perfect.

17.01.2022 Another extremely easy cake - no mixer needed AND as far as I’m concerned THE best banana cake EVER. Recipe is from a very old cookbook called Australia’s favourite recipes, which is a collection of recipes from various people (not famous or well known chefs, just ordinary folk like us). This recipe is a contribution to this collection from a lady called Rosie - no surname. God bless you Rosie for this fabulous recipe. Next to @helen_goh_bakes chocolate cake, this would ...have to be the 2nd easiest cake in the world. Stir everything together and throw it in the tin. Recipe: 2 cups S.R flour 1 tsp bicarbonate soda 1 cup caster sugar 4 eggs lightly beaten 5 large ripe bananas mashed 1 cup vegetable oil. Icing: 2 cups icing sugar sifted 60g unsalted and softened butter 100g cream cheese softened 1 tsp vanilla essence 1. Preheat oven at 150C. 2. This is a large cake so you can use a couple of options to cook it in - a 26cm round tin or a 23cm square tin plus a loaf tin (23cm x 13cm), or 2 loaf tins. I usually use the loaf tins and freeze one of the cakes but this time did a round one. 3. In a large bowl sift flour, bicarb soda, then add the sugar, eggs, mashed banana and oil. Mix well with a wooden spoon and pour into greased and lined tins. 4. Bake for about 1 hour for the larger round tin (mine took 50 minutes) and about 45 mins for loaf tins. 5. Leave it to cool in the tin for about 10 minutes once out of the oven. 6. For icing - mix everything together and spread over cooled cake(s). 7. Refrigerate if not eating it all . 16.01.2022 The last few nights I have been cooking salads/stir fry’s just to change from our usual likes. Recipes are from Hetty McKinnons cook books and they are absolutely wonderful. The recipes are from her Community cookbook (I’ve yet to cook from her other 2 I purchased - Family and From Asia with love). They are simple recipes but so tasteful. 15.01.2022 Yesterday we had a fabulous day judging our salamis we made back in June. Due to COVID we had to postpone this annual event a few times, till we could all get together. The result was a tie - with Rachelle Lucy and yours truly taking the top prize. We had a couple of unhappy contestants, @ciavarellaciro and Vin but I had One very happy husband @the_real_gaffer. To top it all off, you may remember I made my first Limoncello earlier in the year and that was also judged with @ciavarellaciro - had the winning formula with that as well - sorry Ciro. Maybe next year .

14.01.2022 Today was a continuation of preparing olives - black olives. This method is courtesy of my koumbara @sophieatsi who was kind enough to share this recipe. Her dad, Yianni, was in charge of olive preparation in their family, prepared the way his parents did from their town Lakonia in Sparta, Greece. The olives need to be washed well then salted, using coarse salt, quite generously. They are then put in a potato sack (I used an old pillow case, and come to think of it, most ...of us probably don’t have a potato sack - but makes perfect sense in the days gone by). They are then weighed down to get rid of excess water. In a weeks time, toss the olives around in the pillow case and weigh them down again - repeat this process for 4-6 weeks. Taste after the 4th week to see if they lost their bitterness - if so they are ready. Put them in sterilised jars with your preference of herbs - ie. oregano and garlic, fresh chillies, thyme etc. top up with olive oil and store. #olives #mygreekkitchen #homemade #greekfood #greece #cyprus

14.01.2022 Salami is cured and now vacuum sealed to see us through the year till next winter when we do it all over again. I never buy salami from delis as it’s a processed meat and I try to avoid them, but it’s hard to resist these home made ones. You know exactly what goes in them and there certainly isn’t any preservatives, other than salt. They are air dried for 6-8 weeks and voila - fresh home made salami for a year. 09.01.2022 We’ve had such a busy week this week - first chance I’ve had to post anything...on Thursday a big baking day, getting ready for Christmas and stocking up the freezer. Started with making quite a few spanakopittes and with excess dough, also made some Gozleme and a Cypriot dish called Katimeri. It’s a little like baklava but not quite. It’s made with home made pastry, rolled out to a thin consistency. You add thickened cream and sparingly add some crushed almonds. Cinnamon is then sprinkled on top of the nuts and rolled into a snail like shape. Bake in the oven and douse with cold syrup - then consume..delicious - utterly delicious. 06.01.2022 Well, this cake took a little longer to make than I anticipated, but, it was worth it. I’m sure you’ve all heard me rave about THE best chocolate cake EVER that I absolutely love - well this cake is from the same cookbook - SWEET by Helen Goh and Yotum Ottlenghi. It’s a lemon and raspberry cake but I used fresh Mulberries from a good friends tree @mygreengardenau. Divine, delicious, wicked - make it. It’s one of my favourite cookbooks when it comes to baking. The cake is small but tall, enough for 8 people. This was a perfect choice for belated special birthdays for special friends @gin.n.tonik. Celebrating with us @lucyg1313 and @vivianpapaleo - great night.

04.01.2022 Boy what a day - a very early start indeed. Up at 6am to get myself organised to go to mums to make our flaounes. At 7:35am precisely I had a lovely chat with Libby Gorr on her breakfast show on ABC. You can listen to that broadcast by going to the ABC website and replay it. My chat was on at 7:35 - so you can fast forward to that time and listen to it. We talked all things Easter. Once that was done, off to mums for a full day of baking. After making approximately 200 flaounes, we were all ready to collapse. Back home around 5 pm to make 2 pavlovas for tomorrow’s feast. It’s 8:45pm and I’m well and truly ready for bed - big day tomorrow..... All those celebrating an Orthodox Easter, I wish you a wonderful and happy day.

01.01.2022 Vegetarian/Vegan Dolmades - stuffed vine leaves/silverbeet leaves. I used silverbeet leaves today as I had plenty in my garden. I do love this version of stuffing. A lot of people would use rice and various herbs/spices or mince meat and rice. My mum has been making them like this for many years (I think it was her way of getting us to eat more veg when we were younger). They are also a great meal on their own even when fasting. They can be served as a side dish but tonight we had them with salad.
