20.01.2022 ADAM WITH BREAM. . ARCHIBALD PRIZE 2020 . Yoshio Honjo’s subject is celebrity chef, TV presenter, author and winner of 2010 MasterChef Australia Adam Liaw. Honjo says: ‘The episode of Adam’s win was the most watched (non-sport) television event in Australian history. However, it was after MasterChef that I learnt of his passion for Japanese food, culture and history, something we both share a love for. I appreciate that Adam has shone a light on Japanese food in Australia.... . Honjo has painted Adam as Ebisu, one of Japanese mythology’s Seven Lucky Gods. ‘Ebisu is the god of prosperity, plenitude and abundance of crops and food. He is the patron of fishermen and is often pictured with a large fish. The figure of Ebisu is often seen in Japanese restaurants and household kitchens. I’ve painted Adam with a bream. . ‘Adam was enthusiastic about me using handmade Japanese washi paper and mud ink originating from the Japanese countryside. Using traditional materials reflects our shared enthusiasm for the Japanese artisan.’ . Honjo was born in Shiga, Japan in 1979 and moved to Australia in 2005. This business has grown and taken many different directions and developed over the years.From food styling in industry for magazines, cookbooks and TV commercials during the day and lecturing at colleges at night. Creating a boutique cooking school that was a huge success, with over 300 clients, providing basic cooking skills, sharing our favourite recipes and inspiring a gener...ation of cooks. . The early years as a teenager was spent working in retail sales at Accoutrement where wages were $5 per hour, selling imported French cookware, Mexican home wares and delicious sweet treats, exquisite French knives and spices. At night, I would assist the top Sydney chefs like Damien Pignolet, Mogens Bay Esbensen, and Stephanie Alexander, demonstrating recipes, serving food, and on the cash register selling goods, closing up the shop and crashing into bed, before heading back to school the following morning. . Formally trained as a Home Economist back in the day, as there wasn’t much else to study if you had a passion for food. With a strong work ethic, I have always believed in giving back to our community, supporting many local charities with my knowledge and skills. . Exploring Sydney’s diverse suburbs, taking my four children out on adventures each weekend, we discovered the alleyways of Haymarket, the back streets and cheeses of Italian Haberfield, the spices in Lebanese Lakemba, Little India, and Turkish Auburn. It was more than just the food, I was educating my kids on the wider community, sharing my knowledge of this diverse city we live in. Offering Corporate and Private Food Tours, promoting diverse Sydney was the epilogue to these adventures, educating our broader community, showcasing our amazing city. . This great inner city cafe has a focus on Australian native ingredients, woven through its menu, with only six items and everything is $12 and under. The local favourite is their American-style cheeseburger with meat, cheese, pickles and sauce, but the patty is encrusted with a layer of caramelised speck, optional. There are side orders of vegetables potato and cauliflower dressed with green tahini, capers, smoke...d almonds and chips dusted with white pepper. Kale Chips... 1 large bunch curly leaf kale, washed and broken into pieces Olive oil spray 1 tablespoon flaked salt 4 tablespoons nutritional yeast 1 tablespoon dried garlic, optional Place kale on a baking tray and spray with olive oil.. Sprinkle with flaked salt, nutritional yeast and dried garlic. Place in a low oven 100’C for 40 60 mins until kale is crunchy!
