Ingredients: 500 grams cherry or grape tomatoes Flavourista Roasted Garlic Smash Olive Oil 1 tsp Flavourista Stockman’s Whip or Field Mushroom Salt 1 2 tbsp Flavourista Italiano Spice Blend 200 grams Greek feta cheese 250g packet penne pasta Fresh basil leaves, for serving Steps: Preheat oven to 180 degrees. In a baking dish, combine the tomatoes, salt, Italiano Spice and olive oil. Place the feta cheese in the centre and drizzle with more olive oil + a sprinkle of Italiano. Bake for 40 mins. While that’s baking away, boil water and cook your pasta as per packet instructions (al dente is ideal!). When the pasta is cooked, drain it but reserve a little bit of the water. When the baking is done, mix the tomatoes and feta well, then stir through the cooked pasta. If it seems a bit dry, just a little of the reserved pasta water.
