To support the local mental health day, yoga teacher Vee is offering FREE yoga classes on both Sunday 11th and Sunday 18th of October on the lawns out the front of the Milawa Cheese Company! There will be three classes on each day at 11am, 1pm and 3pm and beginners are encouraged to attend. As there is a maximum of 10 people per class, bookings are essential. 18.01.2022 Cheese Focus: Milawa Brie A clean, mild, buttery, white mould cheese that develops a soft luscious texture and rich milkiness as it ripens. And an oozey, rich and full-flavoured number, which is really, really, really great in baked recipes or on a platter! PAIRINGS: Slightly acidic fruit like apples, grapes, and pears go well with our Milawa Brie. Both fresh and dried fruit also pairs well. You could also try unsalted pecans, candied walnuts, and a little honey. Preserv...es are always great to spread on brie. 16.01.2022 Everyone meet Sally Baker! Sal joined the Milawa Cheese Company team back in May of 2018 as our retail manager - and it has been go, go, go ever since! She received intensive training in the factory and retail management, learnt wholesale, payroll, accounts payable and receivable - the list goes on (and on!). You might recognise her as the knowledgeable guide taking you through a cheese tasting, or helping you put a cheese basket or delivery together over the phone. Sal...ly also trains our junior staff who are normally all new to the working world, with this being their first job. She gains great satisfaction from seeing their confidence grow inside (and outside) their role within the company. Sally's energy runs at a 12/10 and it's contagious! Her "can do" attitude and persistence to get the job done to the highest standard is the perfect match with the Milawa Cheese Company work ethic. Her favourite cheese is pictured alongside her - our limited release Markwood (which is only available from our shop in Milawa). We don't know where we would be without Sal, and we're very lucky to have such a driving force within the Milawa Cheese Company team See more

15.01.2022 Curd. This is the stuff (cheese) dreams are made of. Here are the curds of what will later be a Milawa Blue! At this stage the make is complete and we are hooping the cheese (placing the curds into round, funnel-like hoops to give the cheese its shape). Once the curds have been hooped, the cheese has officially been "born" and in the next three months it will mature. Around weeks three to four, the cheese is punctured to allow air to get inside so the mould spores can de...velop. After it has developed its moulds and cheese flavour within the three months, we check to see if it meets our standards of a Milawa Blue. Once approved, the Milawa Blue is ready to enjoy! The curds started as fresh cows milk, that is then pasteurised and brought to a specific temperature before starter cultures and blue mould spores are added. This begins the fermentation process. Next, non-animal rennet is added and we wait for the milk to become solid. Once solid, the curd is cut into 2cm by 2cm cubes and stirred multiple times until the curd reaches the correct moisture content and the whey has been separated. The curd is then transferred onto tables where it dries further as the remaining whey drains away, and, once it has met our standards, the cheese curds fill the hoops. 14.01.2022 Everyone, say hello to Kel Kel has worked at the Milawa Cheese Company location for 9 years, mainly in the restaurant next door and bakery from 1997 to 2006 (you would probably recognise her smiling face and welcoming words). She then took some time off to raise her three lovely boys, and ten years later was given the opportunity to return, but this time in the cheese retail space with us! She is our Queen of Wholesale (otherwise known as Local Wholesale Coordinator). Thi...s role sees her liaising with customers for orders and organising the transportation of cheese to Albury, Wodonga, Shepparton, Benalla, Mansfield, Avenal, Seymour and Euroa, Beechworth, Bright and Myrtleford (just a few local spots that love our cheese ). She is also our Queen of building, styling and presenting jaw-dropping Wedding Cheese Cakes as well as delicious gourmet platters! Kel is the other half of Sally at the shop in making sure that everything gets done and to the highest standard and she always steps up when the business needs it most. Her favourite things about working at Milawa Cheese Co. are educating customers about Milawa cheese through tastings or group talks, and creating happiness through customising the perfect cheese tower for celebrations or putting together a hamper or parcel for someone special. She also loves to not only eat, but talk about Milawa cheese to anyone who will listen. Though, if you ask her what her favourite cheese is, you'll never get one answer! Her top five are our Milawa Brie, the limited edition Markwood, Milawa Blue, King River Gold and Tomme (when it’s in season). We would be well and truly lost without Kel, and know how lucky we are to have her as part of the team

Thanks to the easing of lockdown restrictions in rural Victoria, we're now able to serve our $10 cheese tasting platters for customers to enjoy outside, and have extended our shop hours back to our original 9am til 5pm These platters include four Milawa cow cheeses and four Milawa goat cheeses to be enjoyed outside in the lovely spring weather. There are also gluten-free cheese tasting platters available.... 06.01.2022 Cheese Focus: Saviour Blue Our Saviour Blue is actually the combination of two of our blue cheeses. Stronger batches of Milawa Blue and Milawa Aged Blue whose mould hasn’t developed properly are selected to have their rind cut off and be chopped up into smaller pieces. These pieces are then blended and pressed firmly into blocks, resulting in this bitey blue cheese with a dense, creamy texture. This blue is delicious with a hearty steak, crumbled through salads, cooked... on a pizza or turned into a mouthwatering blue sauce The Saviour Blue was released at the beginning of this year, after the bushfires had devastated many parts of our beloved Victoria High Country, and tourism was non-existent during what is normally our busiest time of the year. There’s not much she can’t do, after working in retail, local wholesale, distribution, administration and payroll. Dea is a fabulous mentor and works hard at strengthening the team. She is continually working on systems to keep the staff safe and streamlining work practices.... She also gardens, loves a drop of red and is a grand mother to 7 lambs.
